Vegetarian Spring Rolls with Sweet Chili Sauce

Spring rolls are a popular appetizer of the Asian cuisine. The ingredients for the spring rolls are wrapped in special dough sheets (for example filo pastry) and then deep-fried in hot oil.

In today’s post, I’ll show you a recipe for vegetarian-filled spring rolls with cabbage, sugar snaps, spring onions, carrots & mung bean seedlings. I wish you lots of fun cooking 😉

Vegetarian Spring Rolls with Sweet Chili Sauce

Ingredients for 10 Vegetarian Spring Rolls:

…for the sweet chili sauce:

  • 3 red chili peppers
  • 2 cloves garlic
  • 1 small piece ginger
  • 300 milliliters water
  • 125 grams sugar
  • 75 milliliters cider vinegar
  • Salt
  • 1 heaping teaspoon cornstarch & a dash cold water

…for the spring rolls:

  • 150 grams cabbage
  • 125 grams sugar snaps
  • 1 large carrot
  • 3 – 4 spring onions
  • 100 grams mung bean seedlings
  • Soy sauce
  • 10 square filo pastry sheets (from the refrigerated shelf)
  • Salt & pepper
  • About 1 liter oil for frying & deep-frying

Required kitchen gadgets, helper & preparations:

  • High container for mixing
  • Blender
  • Saucepan for the sweet chili sauce
  • Whisk
  • Cup to stir together cornstarch & water
  • Large pan for frying
  • Spatula
  • Pot or wok for deep-frying
  • Skimmer
  • Kitchen paper

Instructions:




…preparations for the sweet chili sauce:

Peel ginger & then chop it roughly. Peel garlic & also chop. Remove the stem of the chili peppers & then roughly cut into pieces together with the seeds. Mix 1 heaping teaspoon of cornstarch & 2 – 3 tablespoons of cold water in a cup until smooth.

…for the sweet chili sauce:

Put ginger, garlic and chili in a tall container, add 300 milliliters of water and then mix everything with a blender for 1 – 2 minutes. Put the chili water together with 75 milliliters apple cider vinegar & 125 grams sugar in a saucepan and heat up over low to medium heat.




Mix all ingredients with a whisk until the sugar has dissolved completely and the sauce starts to simmer. Then allow to gently simmer for 8 – 10 minutes, stirring occasionally.

After about 10 minutes add the prepared cornstarch mixture, season the sauce with a pinch of salt and simmer while stirring until the sauce has thickened a bit. Then remove the pot from heat, set aside & allow to cool.

Cut cabbage into thin strips. Peel carrot and cut into fine sticks. Cut spring rolls into fine rings. Diagonally slice the sugar snaps into thin strips. Allow mung bean seedlings to drain.




…for the spring rolls:

Heat up a large pan adding a dash of oil, add the prepared vegetables to the pan and sweat over medium heat for about 2 – 3 minutes, stirring occasionally. Next, add the mung bean seedlings, stir in & sauté everything for another minute.

Finally, deglaze the vegetables with a good shot of soy sauce, stir well again and allow the soy sauce to boil down almost completely. Season everything with salt & pepper, then remove the pan from heat and allow the vegetables to cool slightly.

Lay out the filo pastry sheets one after the other on the worktop, add 1 heaping tablespoon of the cooled vegetable filling to the bottom third of the filo pastry sheets & then whip a corner over the filling and roll up to the middle of the sheet. Fold the ends left and right inwards & continue to roll up, while moistening each upper tip of the pastry sheets with a little water.

Repeat this for the rest of the filo pastry sheets & once this is done, heat up a pot or wok adding 1 liter of oil for deep-frying. As soon as the oil is hot enough, carefully slide the spring rolls into the hot oil and deep-fry them for about 2 to 3 minutes until golden brown, turning or pushing them down into the hot oil using a skimmer, so that also the surface browns evenly.

Lift the finished spring rolls out of the oil and allow to drain on kitchen paper, then serve along with the homemade sweet chili sauce. I wish you lots of fun cooking 😉
