In today’s post, I’ll show you a simple & quick recipe for a tuna salad with iceberg lettuce, cucumbers, tomatoes, bell peppers, onions, carrots & eggs.

To the salad I serve a homemade Thousand Island Dressing, which is super simple in preparation. I wish you lots of fun cooking 😉

Tuna Salad with Thousand Island Dressingg

Ingredients for 2 large plates tuna salad:

…for the dressing:

  • 1 gherkin
  • 75 grams mayonnaise
  • 75 grams yogurt
  • 25 grams ketchup
  • 25 milliliters milk
  • A handful fresh parsley
  • 1 heaping teaspoon ajvar
  • ¼ lemon
  • ½ teaspoon each of garlic & onion powder
  • ½ teaspoon sambal oelek
  • Cider vinegar
  • Salt & pepper

…for the tuna salad:

  • ½ head Iceberg lettuce
  • ½ cucumber
  • 2 – 3 tomatoes
  • 1 bell pepper
  • 1 small red onion
  • 1 large carrot
  • 2 eggs
  • 1 can tuna, drained

Required kitchen gadgets, helper & preparations:

  • Saucepan for the eggs
  • Mixing bowl
  • Whisk
  • Grater
  • Large plates for serving

Bring a pot of water to a boil, add 2 eggs with a spoon to the bubbly water and cook for about 10 minutes. Then remove the eggs from the heat, refresh well with cold water and allow to cool.

…for the dressing:

Finely dice 1 gherkin. Finely chop a handful of fresh parsley. In a mixing bowl combine gherkin & parsley along with 75 grams of mayonnaise & yoghurt, 25 grams of ketchup, 25 milliliters of milk, the juice of ¼ lemon, 1 heaping teaspoon ajvar, ½ teaspoon sambal oil & a dash of apple cider vinegar & stir together with a whisk.




Season the dressing with ½ teaspoon garlic and onion powder and a good pinch of salt & pepper, stir well again and then set aside until serving.

…for the tuna salad:

Roughly cut into pieces or strips ½ head of Iceberg lettuce. Halve ½ cucumber lengthwise and cut into thin slices. Halve tomatoes & cut into thin slices or segments. Peel onion & cut into fine rings. Core the peppers & cut into strips. Peel carrot & grate coarsely. Peel off eggs & quarter them.

Centrally put the Iceberg lettuce on 2 large salad plates. Arrange cucumber and tomato slices on the edges and spread the grated carrots as well as the peppers and onion strips in the middle of the salad. Finally top everything with the quartered eggs & ½ can of drained tuna each salad. Serve the salad along with the prepared dressing & enjoy 😉
