Vegetable Balls (Grönsaksbullar) with Cream Sauce

“Grönsaksbullar” are a vegetarian alternative to the famous meatballs (“Köttbullar”) of the Swedish furniture store Ikea. “Grönsak” is the Swedish word for vegetables & the balls are full of it 😉

In today’s post I show you a recipe for vegetable balls consisting of chickpeas, green peas, corn, carrots, peppers, parsley, onions, garlic and spices. Have fun cooking!

Ingredients for about 25 veggie balls:

…for the veggie balls:

  • 1 can chickpeas
  • 1 large carrot
  • 1 onion
  • 1 – 2 clove(s) garlic
  • ½ red bell pepper
  • 75 grams corn
  • 75 grams green peas (frozen)
  • 75 grams breadcrumbs
  • 25 grams flour
  • 1 heaping teaspoon cajun spice mixture
  • Oil for frying
  • Salt & pepper

…for the cream sauce:

  • 250 milliliters cream
  • 150 milliliters vegetable stock
  • 10 grams butter
  • 10 grams flour
  • 1 tablespoon ajvar
  • Salt & pepper

Required kitchen gadgets, helper & preparations:

  • Grater for the carrot
  • Colander
  • Blender
  • Large pan for the vegetables
  • Mixing bowl for the veggie mixture
  • Saucepan for the cream sauce
  • Whisk

Peel onion & garlic & chop finely. Cut the bell pepper into fine cubes. Peel carrot and coarsely shred with a grater. Finely chop parsley. Drain chickpeas over a pasta strainer.

Heat up a pan adding a dash of oil and sauté onions, peppers, carrots & garlic for 2 – 3 minutes over medium heat, stirring occasionally. Puree chickpeas with a blender until creamy.



In a large mixing bowl combine chickpea puree along with the sautéed vegetables, finely chopped parsley, 75 grams green peas, 75 grams corn, 75 grams breadcrumbs & 25 grams flour. Season the mixture with 1 heaping teaspoon cajun spice mix & a good pinch of salt & pepper, then mix with your hands until all the ingredients & spices have evenly distributed.

Shape the mixture into approximately 25 small balls & and make sure to roll the balls firm & nicely. Then heat up a pan with a good dash oil and fry the veggie balls in several batches over medium heat until brown and crispy.

…for the cream sauce:



Heat up a saucepan adding 10 grams butter over medium heat. As soon as the butter is completely melted & starts to foam add 10 grams flour & whisk together until well combined. Sauté the butter flour mixture for about 1 minute, while stirring constantly. Then pour in 250 milliliters cream & 150 milliliters vegetable stock & stir together until lump-free.

Bring the sauce to a boil & allow to simmer for a few minutes over low to medium heat until the sauce has reached a creamy consistency. Finally, stir in 1 tablespoon of ajvar & season with a pinch of salt & pepper to taste.

Dish up the sautéed veggie balls along with the cream sauce on plates. As a sider serve mashed potatoes & cranberries. Have fun cooking & Good Appetite!
