Baked Potato “Kumpir” with Ground Meat & Couscous

“Kumpir” comes from Turkey & means oven or baked potato. The potatoes are baked in the oven, then cut in the middle (but not through) & finally filled with various ingredients at your whim.

In today’s post I show you a recipe for “Kumpir” with spicy ground beef & couscous. The baked potatoes are garnished with sour cream and fresh parsley. Have fun cooking!

Baked Potatoes “Kumpir” with Ground Beef & Couscous

Ingredients for 6 servings:

  • 6 large potatoes
  • 500 grams ground beef
  • 100 grams couscous
  • 1 can chopped tomatoes
  • 1 – 2 onion(s)
  • 1 – 2 clove(s) garlic
  • A teaspoon each of sumac, cumin, sweet paprika powder & ground coriander
  • Oil for frying
  • Salt, sugar & pepper to taste
  • 1 cup sour cream
  • 2 – 3 sprigs parsley for garnishing

Required kitchen gadgets, helper & preparations:

  • Large pan for couscous beef mixture
  • Suitable baking dish

Instructions:

Preheat oven to 200°C (top/bottom heat) in good time. Place potatoes next to each other in a suitable baking dish, sprinkle with a bit oil & season with a good pinch salt. Then bake in a preheated oven for about 60 – 90 minutes depending on the thickness of the potatoes.

…for filling:




Peel off onions & garlic & chop finely. Heat up a large pan adding a dash oil & sweat onions & garlic over medium heat for about 2 – 3 minutes, stirring occasionally. Next increase the heat to high, add 500 grams ground beef & brown for another 4 – 5 minutes until crumbly, stirring from time to time.

Finally add 1 can chopped tomatoes, 100 grams couscous, 100 milliliters water & season everything with a teaspoon each of sumac, cumin, sweet paprika powder & ground coriander. Give everything a good stir, bring to a simmer & then remove from heat. Season the beef couscous mixture with salt, sugar & pepper to taste & then set aside until serving.

…for Kumpir with Beef & Couscous Filling:




Get the done potatoes out of the oven & spread on plates. Then cut in each potato with a knife or fork & fill with a few spoons beef couscous mixture.

Finally garnish “Kumpir” with a dab sour cream & finely chopped parsley & dish up. I wish you lots of fun cooking 😉
