Stir-fried noodles or Bami Goreng you get at every Asian fast food snack bar. The ingredients are added one after the other to the wok or pan and fried at high temperature with a constant stir.

In today’s recipe I show you a vegetarian recipe for fried noodles with carrots, sugar snaps & white cabbage, but it’s also possible to add other vegetables & chicken or shrimp. Have fun cooking!

Asian Stir-Fried Noodles

Ingredients for 4 servings:

  • 200 grams mie noodles
  • 200 grams sugar snaps
  • 200 grams white cabbage
  • 100 milliliters vegetable stock
  • 1 large carrot
  • 1 shallot
  • 1 small piece ginger
  • 2 cloves garlic
  • 2 eggs
  • 2 tablespoons hoisin sauce
  • 1 tablespoon each of soy sauce & fish sauce
  • 1 tablespoon brown sugar
  • 1 heaping teaspoon sambal oelek
  • 2 spring onions
  • Sesame seeds (white & black) for garnishing
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Suitable bowl for mie noodles
  • Electric kettle
  • Colander
  • Small bowl for sauce
  • Wok or large pan

Boil up water in an electric kettle. Put mie noodles in a suitable bowl, pour over with boiling water to cover the noodles completely & allow to soak for 5 – 6 minutes, then drain noodles over a colander & set aside until further use.

Peel off garlic, ginger & shallot & chop finely. Cut white cabbage into thin strips. Peel carrot & cut into thin slices. Wash sugar snaps, pat dry with kitchen towel & possibly halve them once. Cut spring onions into fine rolls.

…for the sauce:

In a small bowl combine 100 milliliters vegetable stock, 2 tablespoons hoisin sauce, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1 tablespoon brown sugar & 1 heaping teaspoon sambal oelek & mix together until well combined, then set aside until further use.




…for the stir-fried noodles:

Heat up a wok or large pan adding a dash oil, add shallots, garlic & ginger to the pan & stir-fry over high heat for about 1 minute, stirring constantly. Next, add cabbage, sugar snaps & carrots & stir-fry for another 2 – 3 minutes with a constant stir.

Afterwards push the vegetables to the edge of the pan, crack up the eggs & add to the pan, allow to curdle a bit & then stir everything together until the egg is completely fried. Finally add mie noodles & prepared sauce to the pan & stir-fry everything until the noodles have soaked up the complete liquid.




Spread noodles on deep plates & serve garnished with spring onions & sesame seeds (white & black). I wish you lots of fun cooking 😉
