Forget Mother’s Day? No problem, this strawberry cake is baked within minutes and comes with very few ingredients. The cake base, for example, consists only of eggs, sugar & ground almonds.
The cake is topped with a mixture of cream & heavy sour cream as well as fruity strawberries. Because the cake gets along without flour, it is also gluten-free. Have fun baking!

Ingredients for a springform pan with 26cm diameter:
…for cake base:
- 4 eggs
- 200 grams ground hazelnuts
- 100 grams sugar
…for cream & toppings:
- 200 milliliters cream
- 200 grams heavy sour cream or creme fraiche
- 1 sachet cream stabilizer
- 1 sachet vanilla sugar
- 600 grams fresh strawberries
- About 50 grams white chocolate

- Springform pan with 26cm diameter + baking paper

…for cake base:
Preheat the oven to 200 C (top/bottom heat). Line a springform pan (possibly heart shaped) with baking paper. Put 4 eggs & 100 grams sugar into a mixing bowl & mix together with a blender for about 3 – 4 minutes until fluffy.
Next, add 200 grams ground hazelnuts & briefly mix in until well combined, then pour batter into prepared springform pan. Bake the cake base in the preheated oven for about 15 minutes, then get the springform pan out of the oven & allow to cool.
…for cream & more preparations:
For cream put 200 milliliters whipping cream, 200 grams heavy sour cream (or creme fraiche) & 1 sachet each of cream stabilizer & vanilla sugar into a mixing bowl & beat until stiff for about 1 minute with a blender. Wash 600 grams fresh strawberries & cut off the green stem base. Coarsely chop 50 grams white chocolate with a knife.
…for strawberry cake:
Transfer prepared cream into the springform pan & spread evenly on top of the cooled cake base. Next press the strawberries evenly distributed into the cream & finally garnish the cake with the chopped chocolate. Next, dish up the cake immediately or store in the fridge until serving.
