In today’s post, I’ll show you a simple, quick & super delicious recipe for a fruity Chicken Mango Curry.

The curry dish consists of chicken pieces in a spicy & fruity sauce made from various spices, mangos & coconut milk. Have fun cooking!

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 2 mangos
  • 1 can coconut milk
  • 1 large onion
  • 2 cloves garlic
  • 1 small piece ginger
  • A tablespoon curry powder
  • A teaspoon ground coriander
  • Salt, pepper & chili powder to taste
  • Oil for frying
  • Cilantro for garnishing

Required kitchen gadgets, helper & preparations:

  • Tall container for coconut milk
  • Blender
  • Large pan or pot for chicken tikka masala

Core mangos, peel and dice the pulp. Put half of the mango cubes along with 1 can coconut milk in a tall container and purée with a blender for about 1 minute to a creamy coconut-mango sauce, set the other half aside until further use.

Cut the chicken breast into bite-sized pieces. Peel 1 large onion & cut into thin strips. Peel garlic & finely chop. Peel ginger & also finely chop.




…for simple chicken curry:

Heat up a large pan adding a good dash of oil, add the onion strips, garlic & ginger to the pan and fry until glassy with occasional turning for about 2 to 3 minutes. Next, add 1 tablespoon of curry powder and 1 teaspoon of ground coriander, stir in the spices & sauté for about 1 minute.

Now give the diced chicken to the pan and sauté for another 3 – 4 minutes while stirring from time to time, possibly add some more oil to the pan while frying the chicken. Finally, add the coconut-mango sauce and the remaining mango cubes to the pan, stir in and then allow to simmer gently over low heat for about 10 minutes.




Season the curry with salt, pepper & chili powder to taste, remove the pan from heat & then serve garnished with finely chopped cilantro. As a sider cooked rice or Indian Naan bread will work fine. Have fun cooking!
