In today’s post, I’ll show you a super quick & easy recipe for a tasty vegetable stir-fry with ground meat, a recipe for those who like to eat “low carb”.
For this recipe, you can in principle use all the vegetables that are still in the pantry or in the refrigerator. Today I will show you a variant with peppers, zucchini, mushrooms & carrots. Have fun cooking!

Ingredients for about 4 servings:
- 500 grams ground meat
- 400 grams mushrooms
- 2 bell peppers (red & yellow)
- 1 large carrot
- 1 large zucchini
- 1 onion & 1 – 2 clove(s) garlic
- 50 – 75 milliliters soy sauce
- Oil for frying
- Salt & pepper
- Parsley for garnish
Required kitchen gadgets, helper & preparations:
- Large frying pan
Peel onion & garlic & chop finely. Deseed bell peppers & cut into bite-sized pieces. Halve or quarter mushrooms according to size. Peel carrot & cut into thin slices. Quarter the zucchini lengthways and cut into pieces about 1 centimeter thick.
…for ground beef stir-fry:
Heat up a large pan with a dash of oil, add the onions and garlic to the pan and sweat for 2 – 3 minutes over medium heat, turning occasionally.
Next, increase the heat slightly, add the ground meat & sauté for another 5 – 6 minutes until crumbly while stirring from time to time. Then lift the done & crumbly meat out of the pan and put it aside until further use.
Again add a good shot of oil to the pan and sauté the prepared vegetables for another 5 – 6 minutes until everything is cooked, but still has enough bite.
Finally, put the ground meat back to the pan, add a good shot of soy sauce, stir well and then spread on deep plates and serve garnished with chopped parsley. Have fun cooking!
