\"Spaghetti

Spaghetti with Wild Garlic Pesto and Green Asparagus<\/p><\/div>\n

Ingredients for 4 servings:<\/strong><\/p>\n

    \n
  • 400 grams of Spaghetti<\/li>\n
  • 400 grams of green asparagus<\/li>\n
  • 1 bunch of wild garlic<\/li>\n
  • 75 milliliters of olive oil<\/li>\n
  • Approximately 30 grams of Parmesan Cheese<\/li>\n
  • 1 – 2 tablespoons of pine nuts<\/li>\n
  • Sugar<\/li>\n
  • Butter<\/li>\n
  • Salt & pepper<\/li>\n
  • Parmesan to taste<\/li>\n<\/ul>\n

    Kitchen Helper\/Gadgets:<\/strong><\/p>\n

    • Tall conatainer for mashing<\/li>\n
    • Blender<\/li>\n
    • Vegetable peeler<\/li>\n
    • A large pan or wok<\/li>\n
    • A pot for cooking the noodles<\/li>\n
    • Grater for Parmesan Cheese<\/li>\n
    • Colander to drain the pasta<\/li>\n<\/ul>\n

      Instructions:<\/strong><\/p>\n

      …for the wild garlic pesto:<\/em><\/p>\n

      Wash wild garlic, shake dry & then give in a great vessel. Also add approximately 30 grams of Parmesan Cheese, 1 – 2 tablespoons of pine nuts, 75 milliliters of olive oil, a pinch of salt and a pinch of pepper and puree for about 1 – 2 minutes using a blender until you got a viscous pesto.<\/p>\n

      …for the green asparagus:<\/em><\/p>\n

      Peel the lower half of the asparagus with a vegetable peeler, cut off the lower ends & then cut the asparagus diagonally in about 2 centimeters large pieces.<\/p>\n

      Heat up a large frying pan or wok adding a flake of butter over medium heat. Add the asparagus pieces, season with salt, pepper and sugar & saut\u00e9 for about 6 – 7 minutes, stirring occasionally. After searing the asparagus should have a slight bite & here and there slightly browned spots.<\/p>\n

      …for the spaghetti:<\/em><\/p>\n

      Meanwhile: Bring a large pot of salted water to a boil and cook the spaghetti until al dente for about 6 – 7 minutes. Skim a cup of pasta water & drain pasta over a colander, drain briefly and give them along with the prepared pesto and the skimmed pasta water to the green asparagus. Toss everything a few times until the pasta has absorbed the complete liquid, then arrange the spaghetti on plates.<\/p>\n

      Serve the pasta garnished with a little freshly grated Parmesan Cheese. Bon Appetite!<\/p>\n
