Cut spring onions into fine rolls. Peel the garlic and chop finely. Squeeze the lime(s) with a press. Add the tomatoes, spring onions and garlic to a large salad bowl along with lime juice, a good splash of olive oil and a good pinch of salt, sugar and pepper.
