Stir with a whisk or a fork until yeast and sugar have dissolved. Line a baking dish\/casserole with parchment paper.<\/p>\n<p><em>&#8230;for the sunflower seed dough:<\/em><\/p>\n<p>Give 250 grams of sourdough, 250 grams of rye flour, 200 grams of wheat flour, the yeast-water mixture, 1 \u00bd teaspoon of salt &#038; about 100 grams of sunflower seeds in a mixing bowl and mix with the help of a food processor or a blender until a smooth &#038; sticky dough. Loosen the dough from the bowl wall using a spatula and centrally form a ball. Let rest\/stand the dough covered with a kitchen towel in a warm place for about 1 hour until the volume has increased significantly.<\/p>\n<p><em>&#8230;for the sunflower seed bread:<\/em><\/p>\n<p>Flour the work top and give the sticky dough onto the floured countertop. Also dust the dough all around with flour and then knead pulling from the outside inwards for about 1 &#8211; 2 minutes, until the dough is covered all around with flour. Form a ball, brush the bread surface with some water &#038; then sprinkle with additional sunflower seeds. Gently press the sunflower seeds onto the bread surface and then place the loaf into the lined baking dish. Cover the bread with a kitchen towel and let rise for another 30 minutes in a warm place.<\/p>\n<p><em>&#8230; other preparations:<\/em><\/p>\n<p>Preheat the oven to 250 degrees (top\/bottom heat).<\/p>\n<p><em>&#8230;for the sunflower seed dough:<\/em><\/p>\n<p>Cut the bread surface 2 &#8211; 3 times approximately \u00bd &#8211; 1 cm deep and bake the bread covered with a lid in the preheated oven for 30 minutes. Get the baking dish out of the oven, remove the lid and bake again for 5 &#8211; 10 minutes without the lid. During this time have a look at the oven, so that the bread will not get too dark.<\/p>\n<p>Then get the bread out of the oven, lift together with the baking paper on a wire rack and allow to cool.
