Finely chop parsley &#038; set aside for garnish. Then remove the mushrooms from the pan and set aside.<\/p>\n<p>Next, add some more oil to the pan, add onions &#038; garlic and sweat until glassy for 2 &#8211; 3 minutes over medium heat. Season the sauce with salt &#038; pepper to taste and then remove from heat.<\/p>\n<p><em>&#8230;for poutine:<\/em><\/p>\n<p>Remove the French fries from the oven after baking and spread on deep plates. Then sprinkle the fries with a handful grated cheese and afterwards pour over 1 &#8211; 2 dippers of sauce. Garnish the poutine with a little parsley and serve.
