Chilli con Carne with Corn and Kidney Beans

Ingredients for 4 – 5 servings:

  • 500 grams of ground beef
  • 500 milliliters beef stock
  • 2 bell peppers
  • 2 onions
  • 1 – 2 red chillies
  • 2 cloves of garlic
  • 1 tin of chopped tomatoes
  • ½ can of kidney beans
  • ½ can of corn
  • 2 tablespoons of tomato paste
  • ½ teaspoon of cumin
  • 1 tablespoon of sambal oelek
  • A small piece of dark chocolate
  • 1 tablespoon of lard (or oil)
  • Sugar to taste
  • Salt & pepper
  • 1 cup of crème fraîche
  • Some parsley for garnish
  • Tortilla chips or baguette as a sider

  • A large pot or roaster
  • Colander
  • Grater

Peel onions and chop finely. Also peel garlic and chop finely. Wash peppers, remove the seeds and then cut into bite-size pieces or strips. Cut chillies (depending on the desired sharpness) lengthwise, fold down and scrape out the cores using the back of your knife, then cut into thin rings. Drain corn and kidney beans using a colander, rinse with water and drain.

…for the chilli con carne:

Heat up a large pot/roaster adding a tablespoon of lard or oil. Once the lard has a really hot temperature add 500 grams of ground beef and sear a few minutes until the beef gets a beautiful brown color. Then add the chopped onions and garlic and sauté stirring occasionally for a few minutes over slightly reduced heat. Next add 2 tablespoons of tomato puree and stir until everything has a reddish color.

Then deglaze with a tin of chopped tomatoes and 500 milliliters of beef stock (beef broth). Add bell peppers, chillies, corn, kidney beans & 1 tablespoon of sambal oelek and season with a good pinch of salt and pepper, sugar to taste and ½ teaspoon of cumin. Stir in all ingredients and bring to a boil. Then let simmer over low to medium heat stirring occasionally for about 30 – 45 minutes or the chilli con carne gets the desired smoothness. Shortly before serving again season with salt, pepper, sugar and a bit of grated chocolate.

Serve the chilli on deep plates or in bowls. Garnish with 1 tablespoon of crème fraîche and some parsley and give baguette, tortilla chips or tacco shells as a side dish. Bon Appetite!
