In today’s post I’ll show you a quick & easy recipe for delicious yeast knots or milk rolls in the shape of knots. For this we prepare a yeast dough, it is then cut into strips, formed into knots and baked in the oven until golden brown.

The preparation is super easy, as soon as the dough is ready, we knot the rolls, let them rise and then we bake them. Including the resting time, the rolls are on the table after about 1 hour and 45 minutes. Have fun baking!

Ingredients for about 10 – 12 Braided Yeast Knot Buns:

  • 500 grams flour
  • 275 milliliters milk
  • 50 grams soft butter
  • 50 grams sugar
  • ½ cube fresh yeast (about 20 grams)
  • A pinch salt
  • 1 egg yolk + 1 tablespoon milk for brushing

Required kitchen gadgets, helper & preparations:

  • Kitchen machine or mixer with dough hook
  • Mixing bowl
  • Pizza cutter
  • Kitchen towel
  • Rolling pin
  • Baking sheet + baking paper
  • Brush + small bowl for whisked egg yolk
  • Cooling rack

For the yeast dough, crumble ½ cube of fresh yeast into a mixing bowl, add 50 grams of sugar and 275 milliliters of lukewarm milk and stir everything with a whisk or fork until the yeast and sugar have completely dissolved. Next, add 500 grams of flour, 50 grams of soft butter and a pinch of salt to the mixing bowl and knead everything into a smooth dough using a food processor or a mixer with a dough hook for about 4 – 5 minutes.

Place the finished dough on a floured work surface and roll it out with a rolling pin to a size of approximately 30cm x 20cm. Then cut the dough into 10 – 12 equal strips with a knife or pizza cutter. Form the strips one after the other into small knots, either “hiding” the ends under the bun or letting one of the ends “peep out” at the top.

Place all the shaped rolls on a baking tray lined with baking paper, leaving a little space between them. Cover the rolls with a kitchen towel and let them rest in a warm place for at least 45 minutes until the dough volume has increased significantly. Preheat the oven in good time to 180°C (fan oven) or 200°C (top/bottom heat). Whisk 1 egg yolk with 1 tablespoon of milk and, after the resting time, brush the risen rolls with the beaten egg yolk.

Put the knot rolls in the preheated oven for about 15 minutes and bake until golden brown, then take them out of the oven, let them cool down briefly and best serve them warm with butter. Have fun baking!
