I cook today: Spaghetti All’Arrabbiata

Ingredients for 4 servings:
- 400 grams of Spaghetti
- 100 grams of bacon or pancetta
- 1 tin of chopped tomatoes
- 100 milliliters of tomato puree
- 1 onion
- 1 clove of garlic
- 1 teaspoon chilli flakes
- ½ teaspoon of marjoram, rosemary, oregano, thyme and basil
- Sugar
- Salt & pepper
- Parmesan to taste
Kitchen Helper/Gadgets:
- A large pan for cooking the pasta sauce
- A pot for cooking the noodles
- Grater for Parmesan Cheese
- Colander to drain the pasta
Instructions:
Peel onion & garlic and chop finely. Cut bacon into fine strips.
…for the all’arrabbiata pasta sauce:
Heat up a large frying pan without adding oil or fat and fry the bacon strips turning occasionally a few minutes until brown and crispy. Add onions and garlic and sauté for about 2 minutes, stirring occasionally. Add 1 tin of chopped tomatoes, 100 milliliters of tomato puree, 1 teaspoon chilli flakes and ½ teaspoon marjoram, basil, thyme, rosemary and oregano, give it a good stir and simmer for 5 – 10 minutes over low heat. Season with salt, pepper and sugar.
…for the spaghetti:
Meanwhile: Bring a large pot of salted water to a boil and cook the spaghetti until al dente for about 7 minutes. Drain pasta over a colander, drain briefly and then give them to the sauce. Toss everything a couple of times, so that the pasta can absorb the sauce, then arrange the spaghetti on plates.
Serve garnished with a little freshly grated Parmesan Cheese. Bon Appetite!
