Trianglular Champions Rolls

Ingredients for 16 Trianglular Champions Rolls:

  • 250 grams of homemade sourdough (here’s the recipe)
  • 200 grams of wheat flour
  • 250 grams of rye flour
  • 250 milliliters of water
  • 50 grams of flaxseeds
  • 50 grams of sunflour seeds
  • ¼ cube of yeast
  • 1 ½ teaspoon of salt
  • 1 tablespoon of sugar
  • Poppy & sesame seeds

Kitchen Helper/Gadgets:

  • Mixer/Food processor
  • A mixing bowl
  • High vessel for stirring the yeast-water-mixture
  • Baking sheet + Baking paper
  • Kitchen towel
  • Spatula
  • Whisk or Fork
  • Brush
  • Possibly a pie savior
  • Possibly a flower spray
  • Wire rack

Instructions:

…preparations:

Crumble yeast into a high vessel and pour in 250 milliliters of lukewarm water and add 1 tablespoon of sugar. Stir with a whisk or a fork until yeast and sugar have dissolved. Line a baking sheet with parchment paper.

…for the champions rolls dough:

Give 250 grams of sourdough, 250 grams of rye flour, 200 grams of wheat flour, the yeast-water mixture, 1 ½ teaspoon of salt & about 50 grams of flax seeds in a mixing bowl and mix with the help of a food processor or a blender until a smooth & sticky dough. Loosen the dough from the bowl wall using a spatula and centrally form a ball. Let rest/stand the dough covered with a kitchen towel in a warm place for about 1 hour until the volume has increased significantly.

…for the champions rolls:

Flour the work top and give the sticky dough onto the floured countertop. Also dust the dough all around with flour and then knead pulling from the outside inwards for about 1 – 2 minutes, until the dough is covered all around with flour. Halve the dough using a knife and then form a ball from each piece of dough. Place one half of the dough to the side, gently flatten the other to a thickness of about 2 centimeters (the dough should keep its round shape). Brush the surface with some water & then sprinkle with sunflower seeds. Gently press the sunflower seeds onto the surface and then (possibly with the help of a pie savior) turn the loaf once. Also brush the other side with some water and then sprinkle with poppy and sesame seeds.

Halve the loaf centrally with a knife, then cut into quarters and then into eighths. Place the rolls with some distance to each other on the prepared baking sheet and let stand/rest covered with a kitchen towel for another 30 minutes in a warm place.

… other preparations:

Preheat the oven to 250 degrees (top/bottom heat).

…for the champions rolls:

Spray the rolls after 30 minutes of resting time with some water (possibly with a flower spray) & then bake in a preheated oven for about 15 – 20 minutes until golden brown. During this time have a look at the oven, so that the rolls will not get too dark.

Then get the rolls out of the oven & allow to cool completely on a wire rack.
