Gratinated Sweetheart Cabbage Sandwiches garnished with Chives and Bacon

Ingredients for 4 servings:

  • 1 small sweetheart cabbage (about 750 grams)
  • 8 slices rye bread
  • 2 onions
  • 200 grams of grated cheese
  • 100 grams of bacon
  • 1 cup of crème fraîche
  • ½ bunch of chives
  • ½ teaspoon of nutmeg
  • Butter
  • Salt & pepper

  • A pot to cook the sweetheart cabbage
  • A large frying pan or wok
  • Kitchen paper
  • Casserole
  • Pasta strainer
  • Toaster

Instructions:

…preparations:

Halve sweetheart cabbage, cut out the stalk & then cut into fine strips. Peel onions and chop finely. Cut bacon into strips. Cut chives into small rings. Roast 8 slices rye bread in the toaster.

…for the bacon:

Heat up a large frying pan or wok without adding oil or grease and fry the bacon strips for a few minutes until crispy. Then allow to drain on paper towels and set aside.

…for the cabbage:

Bring a large pot of salted water to a boil and cook the cabbage in it for about 3 – 4 minutes, then drain over a pasta strainer/colander.

Heat up the bacon pan/wok again adding a flake of butter and fry the onions for a few minutes over medium heat until glassy, ​​stirring occasionally. Once the onnions are glassy add the drained cabbage, 1 cup crème fraîche, ½ teaspoon nutmeg & a pinch of salt and pepper. Stir until all the ingredients have evenly incorporated, then pull the pan from the heat.

…for the gratinated cabbage breads:

Place the toasted bread slices in a baking dish and cover with the cabbage mass. Top the cabbage with grated cheese and gratinate in a preheated oven at 200 ° C (grill function) for about 6 – 7 minutes until the cheese melts.

Arrange the breads on plates and serve garnished with crispy bacon and chives. Bon Appetite!
