Spaghetti with Wild Garlic Pesto and Green Asparagus

Ingredients for 4 servings:

  • 400 grams of Spaghetti
  • 400 grams of green asparagus
  • 1 bunch of wild garlic
  • 75 milliliters of olive oil
  • Approximately 30 grams of Parmesan Cheese
  • 1 – 2 tablespoons of pine nuts
  • Sugar
  • Butter
  • Salt & pepper
  • Parmesan to taste

Kitchen Helper/Gadgets:

  • Tall conatainer for mashing
  • Blender
  • Vegetable peeler
  • A large pan or wok
  • A pot for cooking the noodles
  • Grater for Parmesan Cheese
  • Colander to drain the pasta

Instructions:

…for the wild garlic pesto:

Wash wild garlic, shake dry & then give in a great vessel. Also add approximately 30 grams of Parmesan Cheese, 1 – 2 tablespoons of pine nuts, 75 milliliters of olive oil, a pinch of salt and a pinch of pepper and puree for about 1 – 2 minutes using a blender until you got a viscous pesto.

…for the green asparagus:

Peel the lower half of the asparagus with a vegetable peeler, cut off the lower ends & then cut the asparagus diagonally in about 2 centimeters large pieces.

Heat up a large frying pan or wok adding a flake of butter over medium heat. Add the asparagus pieces, season with salt, pepper and sugar & sauté for about 6 – 7 minutes, stirring occasionally. After searing the asparagus should have a slight bite & here and there slightly browned spots.

…for the spaghetti:

Meanwhile: Bring a large pot of salted water to a boil and cook the spaghetti until al dente for about 6 – 7 minutes. Skim a cup of pasta water & drain pasta over a colander, drain briefly and give them along with the prepared pesto and the skimmed pasta water to the green asparagus. Toss everything a few times until the pasta has absorbed the complete liquid, then arrange the spaghetti on plates.

Serve the pasta garnished with a little freshly grated Parmesan Cheese. Bon Appetite!
