Gyros Pita with Coleslaw & Tzatziki

Ingredients for 4 Gyros Pitas:

…for the Gyros:

  • 1 kilogram pork neck steaks
  • 3 tablespoons of oregano
  • 2 tablespoons of thyme
  • 1 heaped tablespoon of salt
  • 1 heaped tablespoon of ground pepper
  • 1 heaped tablespoon of paprikapowder noblesweet
  • 1 tablespoon of marjoram
  • 1 tablespoon of garlic powder
  • 1 tablespoon of rosemary
  • 1 tablespoon of ground coriander
  • ½ tablespoon of cumin
  • ¼ tablespoon of chilli flakes
  • 75 – 100 milliliters of olive oil
  • 1 large onion

…for the Tzatziki:

  • 150 grams of curd
  • 150 grams of Greek yogurt
  • 1 clove of garlic
  • ¼ cucumber
  • Salt & pepper
  • Olive oil
  • Vinegar

…for the Pita Bread

  • 300 grams of flour
  • ½ cube of yeast
  • 150 milliliters of lukewarm water
  • Olive oil
  • 1 teaspoon of sugar
  • 1 teaspoon of salt

  • Cereal bowl
  • Mixing bowl
  • Large frying pan
  • Grater
  • Garlic press
  • Cling film
  • A high vessel for stirring the yeast-water mixture
  • Fork or whisk
  • Mixer/Food processor
  • Kitchen towel
  • Rolling pin
  • Kitchen paper

Instructions:

…for the Gyros:

For the gyros spice mixture add 3 tablespoons of oregano, 2 tablespoons of thyme, 1 heaped tablespoon of salt, 1 heaped tablespoon of ground pepper, 1 heaped tablespoon of paprikapowder noblesweet, 1 tablespoon of marjoram, 1 tablespoon of garlic powder, 1 tablespoon of rosemary, 1 tablespoon of ground coriander, ½ tablespoon of cumin& ¼ of tablespoon chilli flakes into a cereal bowl and mix well. Cut the neck steaks into strips. Peel onion and then cut into fine strips.

Get a large mixing bowl and add the meat, the onion strips, the gyros spice mixture & about 75 – 100 milliliters of olive oil & mix using your hands about 1 – 2 minutes until all ingredients are evenly distributed. Cover the bowl with plastic wrap and allow to marinate in the refrigerator overnight.

…for the Tzatziki:

Wash the cucumber, cut in half lengthwise and scrape out the cores with a spoon. Coarsely grate the cucumber with a grater and stir together with 150 grams of Greek yogurt , 150 grams of curd, a pressed clove of garlic, a dash of olive oil, a dash of vinegar, a pinch of salt and a pinch of pepper. Also cover the tzatziki with cling film and let soak overnight in the refrigerator. Shortly before serving season again with salt, pepper, vinegar and olive oil.

…for the Pita Bread:

Crumble ½ cube of yeast into a high vessel, then add 1 teaspoon of sugar and 150 milliliters of lukewarm water & stir using a fork or small whisk until yeast and sugar have completely dissolved.

Get a mixing bowl and add 300 grams of flour. In addition add the yeast-water mixture, 1 teaspoon of salt and a dash of olive oil and mix either with your hands or a food processor to a smooth dough. Form a ball of dough and give it back to the mixing bowl. Sprinkle the dough with a dash of olive oil and rub around, then let rest for about 30 minutes in a warm place covered with a kitchen towel.

After resting time knead the dough again for about 1 minute & then cut into 4 approximately equal sized pieces. Form each piece of dough into a ball, then roll out thin and flat with a rolling pin to small flatbreads. Through the previous oil rub the dough should not stick to the work surface when rolling.

Heat up a large frying pan with plenty of oil and fry the flatbreads over medium heat on each side for about 1 – 2 minutes until golden brown, then drain on paper towels.

…for the Gyros:

Heat up a large frying pan without adding oil or fat and brown the marinated gyros for about 8 – 10 minutes from all sides, stirring occasionally.

…for Gyros Pitas:

Place the pita breads onto plates and top with plenty of pan gyros, then garnnish with some coleslaw & tzatziki to taste & serve immediately. Bon Appetite!
