Chicken Sandwich with Tomatoes & Rocket

Ingredients for 4 Chicken Sandwiches:

  • 8 slices white bread/toast
  • 2 large chicken breasts
  • 2 tomatoes
  • 8 slices of processed cheese
  • 4 hands rocket
  • 5 heaping tablespoons of mayonnaise
  • 1 heaping tablespoon of grainy mustard
  • ½ clove of garlic
  • 1 – 2 teaspoon of paprika powder
  • ¼ teaspoon of cayenne pepper
  • Olive oil
  • Salt & pepper

  • Casserole
  • Kitchen paper
  • Garlic press
  • Panini grill or grill pan

Instructions:

…preparations for the chicken:

Preheat oven to 200 degrees (top/bottom heat). Rinse chicken breasts under running water and pat dry with paper towels, then place in a baking dish and season with a good pinch of salt, a good pinch of pepper, 1 – 2 teaspoons of paprika powder, ¼ teaspoon of cayenne pepper and also drizzle with a dash of olive oil. Then rub the chicken with the spices and oil, then bake for 20 minutes in a preheated oven.

…other preparations:

Wash tomatoes, then cut into slices. For the sauce stir together 5 heaping tablespoons of mayonnaise, 1 heaping tablespoon of grainy mustard and ½ clove of pressed garlic in a bowl, then set aside. After 20 minutes get the chicken out of the oven and with a sharp knife cut into slices.

…for the chicken sandwich:

Grease 2 slices white bread or toast with 1 tablespoon of sauce. Give a handful of rocket onto one bread half, then top with a few slices of chicken & tomatoes. Cover the tomatoes with 2 slices of processed cheese and lid the sandwich with the second bread half.

Grill the sandwich for a few minutes in a panini grill or a grill pan (just put the sandwich in the grill pan loaded with a small pot or a pan, after a few minutes gently turn the sandwich once) until the cheese is melted and the sandwich becomes the typical grill patterns. Bon Appetite!
