Ingredients for 4 Pepper & Tomato Baguettes:
- 1 large baguette bread
- 2 peppers
- 2 tomatoes
- 5 sprigs of basil
- 1 – 2 teaspoons thyme
- 100 grams of grated cheese
- Oil for frying
- Sugar
- Salt & pepper
Kitchen Helper/Gadgets:
- Large pan
- Oven with grill function
- Kitchen spatula
Instructions:
Deseed peppers and cut into thin strips. Cut tomatoes in about 1 centimeter large cubes. Pluck basil leaves and then chop coarsely. Cut the baguette depending on the size in half or thirds, then cut lengthwise. Preheat the oven to 200°C (grill function).
…for the peppers and tomato mixture:
Heat up a pan adding a dash of oil, add pepper strips and 1 – 2 teaspoons of thyme & fry over medium heat for about 4 – 5 minutes turning occasionally. Then turn down the heat and add diced tomatoes, basil and a pinch of salt, pepper and sugar and stir briefly.
…for the Simple Pepper & Tomato Baguettes:
Give the peppers and tomato mixture evenly over the baguette halves & top each baguette with a little grated cheese, then bake in the preheated oven for about 6 – 7 minutes until the cheese is melted. Pick the baguettes from the oven and serve. Bon Appetite!
