Ingredients for 1 kilogram of Red Cabbage with Apples:
- 1 kilogram of red cabbage
- 250 milliliters of red wine
- 3 apples
- 1 onion
- 3 tablespoons wild cranberries
- Red wine vinegar
- 2 bay leaves
- ½ cinnamon stick
- 5 – 6 juniper berries
- 3 – 4 cloves
- Clarified butter
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Sharp knife
- Large pot
- Grater
- Stapler
- A tea bag for self filling
Instructions for the Homemade Red Cabbage with Apples:
Cut the red cabbage into fine strips with a sharp knife. Peel and finely chop the onion. Core the apples and grate coarsely with a grater. Then fill a tea bag to fill yourself with ½ a cinnamon stick, 2 bay leaves, 5 – 6 juniper berries & 3 – 4 cloves, fold over the opening of the tea bag 1 – 2 times & then close it several times with a stapler.
Heat a large pot with a tablespoon of clarified butter, add the grated apples and the finely chopped onion to the pot & sauté for 2 – 3 minutes over medium heat, stirring occasionally.
Now add the red cabbage, mix everything together and sauté the red cabbage briefly. Season everything with a good pinch of salt and freshly ground pepper, then add a dash of red wine vinegar, the tea bag with the spices, 3 tablespoons of wild cranberries and finally 250 milliliters of red wine.
Then mix everything together well & as soon as the red wine is simmering, simmer with the lid on for about 45 – 60 minutes over low heat, stirring the red cabbage occasionally. As soon as the desired consistency is reached, remove the tea bag with the spices & then serve with game goulash, for example. Have fun imitating!
