Spaghetti alla Carbonara is probably one of the most famous Italian pasta dishes alongside spaghetti bolognese or lasagna & apart from spaghetti only needs three other ingredients, namely bacon, parmesan or pecorino & eggs.
The spaghetti alla carbonara are on the table within 15 – 20 minutes and are therefore definitely one of the super fast pasta recipes. Have fun cooking!

Ingredients for 2 servings:
- 250 grams spaghetti
- 2 eggs + 1 yolk
- 100 grams bacon, pancetta or guanciale (non-smoked Italian jowl bacon)
- 30 grams Pecorino or Parmesan Cheese
- Salt & pepper
Kitchen Helper/Gadgets:
- Large pan
- Bowl to stir together egg & cheese
- Grater
- Whisk
- Large pot to cook the spaghetti
- Ladle

Cut bacon into strips or chunks. In a medium bowl mix together 2 eggs with 1 egg yolk, 30 grams finely grated Pecorino (or Parmesan Cheese) & a good pinch of freshly ground pepper with a whisk, then set aside.
…for the spaghetti & bacon:
Bring to a boil a pot with salted water & cook spaghetti for about 7 minutes until al dente. At the same time as the spaghetti are cooking heat up a large pan without adding additional oil or fat and fry the bacon strips for about 4 minutes over medium-high heat until brown & crispy. Once the bacon strips are crispy enough pull the pan from the stove and set aside to cool down.
…for the Spaghetti alla Carbonara:
As soon as the spaghetti are done, use a ladle to transfer them directly from the noodle water to the bacon pan & mix briefly. Then add the egg and cheese mixture and mix well. Serve the Spaghetti alla Carbonara immediately and garnish with some freshly ground pepper. Bon Appetite!
