Ingredients for about 8 – 10 chocolate pancakes:
…for the hot cherries:
- 1 glass sour cherry
- 1 sachet vanilla sugar
- 1 tablespoon cornstarch
…for the chocolate pancakes:
- 200 grams flour
- 300 milliliters buttermilk
- 50 grams butter
- 50 grams sugar
- 30 grams cocoa powder
- 1 egg
- 1 sachet vanilla sugar
- 1 sachet baking powder
- A pinch of salt
Required kitchen gadgets, helper & preparations:
- Sieve
- Cup to stir together cornstarch mixture
- Saucepan for cooking the hot cherries
- Mixing bowl
- Whisk
- Coated pan for the pancakes
Instructions:
…for the hot cherries:
Drain the sour cherries over a sieve and collect the cherry water. Give 1 tablespoon cornstarch & 1 sachet of vanilla sugar into a cup & stir until smooth with about 3 – 4 tablespoons cherry water, then briefly set side.
Pour the remaining cherry water into a saucepan & bring to a boil over medium heat. Once the water starts to simmer use a whisk to stir in the prepared cornstarch mixture.
Next, allow to simmer for about 2 – 3 minutes until the cherry water starts to thicken a bit. Finally add the drained cherries, stir in briefly & then pull the saucepan from heat & set aside until serving.
…for the pancake batter:
In a large mixing bowl combine 50 grams sugar, 1 egg, 300 milliliters buttermilk, 1 sachet vanilla sugar & a pinch of salt. Stir together all ingredients with a whisk until well combined & the sugar has completely dissolved.
Next, add 50 gramsmelted butter, 200 grams flour, 30 grams cocoa powder & 1 sachet baking powder & stir together with a whisk until a smooth batter.
…for the pancakes:
Afterwards heat up a coated pan over low to medium heat & successively bake 8 – 10 pancakes from the batter.
After about 1 – 2 minutes of baking, small air bubbles should be visible on the surface, then turn the pancakes once and bake on the other side for another 1 – 2 minutes until done.
Stack the done pancakes on top of each other & serve along with the hot cherries.
