Homemade Duchess Potatoes

Duchess potatoes are a potato sider of classic French cuisine and especially at Christmas time a popular side dish to hearty meals such as roasts or roulades.

For the preparation, mashed potatoes are mixed with butter, eggs and spices, then sprayed with a piping bag and baked in the oven.

Ingredients for about 60 Duchess Potatoes:

  • 1,25 kilograms floury potatoes
  • 2 eggs + 2 egg yolks
  • 100 grams butter
  • ¼ teaspoon nutmeg
  • Salt & pepper

Required kitchen gadgets, helper & preparations:

  • Pot or saucepan to cook potatoes
  • Colander
  • Mixing bowl
  • Potato ricer or alternatively potato masher
  • Piping bag with star nozzle
  • Baking tray + parchment paper

Preheat oven to 180°C (top/bottom heat) in time. Line a baking tray with parchment paper. Peel potatoes & cover them with salted water in a pot or saucepan. Bring potatoes to a boil & then allow to cook over low to medium heat with the lid closed for about 25 minutes until done. Afterwards drain potatoes over a colander & allow to cool for about 5 minutes.

Press potatoes using a potato ricer (or alternatively a potato masher) & in a mixing bowl combine mashed potatoes along with 100 grams butter, a good pinch of salt & pepper & ¼ teaspoon nutmeg. Then mix everything until well combined & the butter is completely melted.




Afterwards add 2 eggs & 2 egg yolks to the potato mixture & mix again until well combined & you got a smooth potato mixture.

Transfer the potato mixture to a piping bag with star nozzle & then pipe small humps or rosettes with circular movements onto the prepared baking tray. Next, bake the duchess potatoes in the preheated oven for about 25 minutes until golden brown. Then get the done duchess potatoes out of the oven & serve along to a hearty meal such as roulades or a roast.
