Instructions:
…for corn tortillas:
Put 200 grams cornmeal, 100 grams wheat flour, 150 milliliters water, 25 milliliters oil & ½ teaspoon of salt in a mixing bowl and knead with your hands for about 4 – 5 minutes to a smooth dough. Divide the dough into 6 equal pieces with a knife & shape them into small balls one after the other. With a rolling pin roll out the dough balls on a slightly floured countertop as round as possible & to the size of a small plate (approx. 20 cm in diameter).
Heat up a pan without adding oil or fat & bake corn tortillas successively for 1 – 2 minutes each side over medium heat. Next, stack baked corn tortillas on top of each other on a plate & allow to rest covered with a damp kitchen towel until serving.
…for chimichurri sauce:
Peel off shallot & garlic & coarsely chop. Squeeze out 1 lime with lemon juicer. Next in a tall container combine shallots & garlic along with a handful each of fresh cilantro & parsley, 100 milliliters olive oil, lime juice, 2 tablespoons red wine vinegar, 1 teaspoon oregano, ½ teaspoon chilli flakes & a good pinch of salt, sugar & pepper, then puree with a blender for about 1 – 2 minutes until a smooth sauce.
…for steak tacos:
Cut tomatoes into fine cubes. Cut spring onions into fine rolls. Cut beef into strips or cubes. Next, heat up a pan adding a dash of oil and sear beef cubes all around until brown & crispy for a few minutes, then remove the pan from heat and season with salt and pepper.
Garnish corn tortillas with steak strips, diced tomatoes, spring onions and chimichurri sauce to taste & serve them along with fresh cilantro and lime wedges. I wish you lots of fun cooking 😉
