Instructions:
…for pizza dough:
Crumble ¼ cubes of yeast into a tall container, add ½ teaspoon of sugar and 150 milliliters of lukewarm water and mix everything with a whisk or a fork until the yeast and sugar have completely dissolved.
Then put the yeast-water mixture along with 300 grams flour, 25 milliliters olive oil & ½ teaspoon of salt to a mixing bowl and knead with your hands or a food processor for about 4 – 5 minutes until a smooth dough. Halve the dough once, then form into small balls and let the dough balls rest on a floured work surface covered with a kitchen towel for about 30 minutes.
…for the minced beef filling:
Peel a red onion and cut into thin strips. Also peel off 1 – 2 clove(s) garlic and finely chop. Pour off corn and black beans over a pasta strainer and rinse thoroughly, then allow to drain. Afterwards heat up a large pan adding a dash of oil and sweat onions and garlic for 1-2 minutes over medium heat until glassy, stirring occasionally.
Next, increase the heat slightly, add the minced meat & sauté for 4 – 5 minutes until crumbly, turning occasionally. Season the mixture with 1 teaspoon each cumin, ground coriander, paprika powder (sweet) & oregano, also add corn, black beans and 250 milliliters sieved tomatoes.
Stir in all ingredients & warm up briefly (about 1 minute). Finally, season the minced meat filling with salt, sugar & pepper to taste, then remove from heat and set aside until serving.
…for Tex Mex Pizza:
Preheat the oven to 220°C (top/bottom heat) in time. Then lift the dough balls onto a lined baking sheet or pizza pan and flatten the dough balls with your hands from the inside outwards to form a large, circular pizza. Top the pizza with a few tablespoons of ground meat mixture.
Sprinkle the pizza with some grated cheese & then bake for about 15 minutes in the preheated oven until the cheese has melted and the pizza is nice and crispy. Cut the finished pizza into pieces with a knife and serve garnished with finely chopped cilantro. I wish you lots of fun cooking 😉
