Some time ago I presented you a recipe for a super delicious onion cake, which was made with a quick quark oil dough instead of a yeast dough.
Today I’ll show you a little variation: we bake a vegetable cake or a veggie quiche filled with kohlrabi, carrots & leeks, also with a quark oil dough. Have fun baking 🙂

Ingredients for 1 Vegetable Cake:

- 225 grams flour
- 125 grams curd
- 75 milliliters milk
- 50 milliliters oil
- ½ sachet baking powder
- ½ teaspoon salt

- 3 – 4 carrots
- 1 stick leek
- 1 kohlrabi
- 200 milliliters cream
- 100 Gramm grated cheese
- 3 eggs
- 1 heaping tablespoon flour
- Salt, pepper & nutmeg to taste
- Öl zum Anbraten
Required kitchen gadgets, helper & preparations:
- 26er springform pan + baking paper
- Mixing bowl for dough
- Rolling pin
- Kitchen machine or mixer with dough hooks
- Large frying pan for veggies
- Mixing bowl for egg-cream mixture
- Whisk
Instructions:
…for the veggie quiche:
Line the bottom of a springform pan with baking paper & allow the rim to snap in as usual, then grease the rim with a little butter & set pan aside until further use. Preheat the oven to 180°C (top/bottom heat) in good time.
For the dough combine 225 grams flour, 125 grams curd/quark, 75 milliliters milk, 50 milliliters oil, ½ sachet baking powder & ½ teaspoon salt in a mixing bowl & knead together for 3 – 4 minutes with a kitchen machine or mixer with dough hooks until smooth.
Afterwards put dough on a slightly floured worktop & briefly knead again with your hands, shape dough into a ball & then use a rolling pin to roll out in a round & about 0,5 centimeter thick dough sheet.
Transfer the dough sheet into the prepared springform pan & line the bottom as well as the edges with dough, then set springform pan aside until further use. Next, put 3 eggs, 200 milliliters of cream, some nutmeg (to taste) & a good pinch of salt & pepper in a mixing bowl & whisk together, then set aside as well.
For the vegetable filling, peel the kohlrabi & cut into small cubes. Peel the carrots, halve or quarter lengthways depending on their size, and also cut into cubes. Wash the leek and cut into rings. Heat up a large pan with a good dash of oil & sweat the vegetables over medium heat for about 4 – 5 minutes, stirring occasionally.
After about 5 minutes, sprinkle a heaping tablespoon of flour over the vegetables, briefly stir in the flour & then remove the pan from heat. Then transfer everything into the prepared springform pan, pour the egg-cream mixture over it & finally spread some grated cheese on top.
Bake the vegetable cake for 35 – 40 minutes at 180°C (top/bottom heat) in a preheated oven until golden brown, then take the done veggie quiche out of the oven & allow to cool down a bit in the springform pan. Finally remove the springform pan, cut the cake into pieces & serve garnished with some chopped parsley. Have fun baking!
