Christmas without “stollen” is almost impossible, “stollen” are available in countless variations and with many different ingredients, a quick and easy variant is, for example, the quark stollen.
In today’s post, I’ll show you a quark stollen in the shape of a muffin, along with super delicious marzipan crumbles, which we simply spread over the muffin dough. Happy baking!

Ingredients for 12 “Quark Stollen” Muffins with Marzipan Crumbles:
…for stollen mixture:
- 300 grams wheat flour
- 250 grams quark
- 150 grams soft butter
- 100 grams ground almonds
- 100 grams raisins
- 100 grams dried apricots
- 75 grams sugar
- 1 large egg
- 1 sachet vanilla sugar
- ½ sachet baking powder
- Powdered sugar for garnish

- 100 grams flour
- 100 grams marzipan
- 75 grams cold butter
- 50 grams sugar
Required kitchen gadgets, helper & preparations:
- Mixing bowl for crumbles
- Kitchen machine or mixer with dough hooks
- Muffin pan
- Paper liners
Instructions:
…for “Quark Stollen” Muffins with Marzipan Crumbles:
Preheat the oven to 180°C in good time (top/bottom heat). Line the muffin tin with paper cups, alternatively grease with butter or oil. Put 100 grams of flour, 100 grams of raw marzipan (plucked into small pieces), 75 grams of cold butter & 50 grams of sugar in a mixing bowl & knead with your hands to form a crumbly dough, then briefly set aside.
Cut 100 grams of dried apricots into small pieces or strips. For the quark stollen, put 300 grams of flour, 100 grams of ground almonds, 75 grams of sugar, 1 sachet of vanilla sugar & ½ sachet of baking powder in a mixing bowl & give everything a quick stir until the dried ingredients are mixed a bit.
Then add 250 grams of quark, 150 grams of soft butter & 1 large egg & knead everything for 3 – 4 minutes with a food processor or a mixer with dough hook until all ingredients are evenly spread, finally add raisins and apricots & knead briefly.
Use 2 tablespoons or an ice cream scoop to fill the dough into the prepared muffin tin & decorate with the marzipan crumbles. Then put the muffin tin in the preheated oven & bake for about 25 – 30 minutes until golden brown.
Take the finished muffins out of the oven, allow them to cool on a wire rack & then dust with some icing sugar for garnish & serve. Have fun baking!
