Preheat the oven to 180° degrees (top/bottom heat). Line the muffin tin with paper liners or grease with butter. Melt 150 grams of butter in the microwave or on the stove. Mix 275 grams of flour, 50 grams of baking cocoa, 1 heaped teaspoon of baking powder and a pinch of salt and set aside.
Next, add 3 eggs, 125 grams of sugar, melted butter, 150 milliliters of cherry juice & 1 sachet of vanilla sugar into a mixing bowl and beat using a mixer or food processor for 1 – 2 minutes until all ingredients are evenly distributed. Then add the flour cocoa mixture and stir with a mixer until a smooth dough is formed.
Finally, add 250 grams of drained cherries and 100 grams of baking-stable chocolate pieces/chunks to the dough and stir in briefly. Transfer the finished dough into the prepared muffin tin using 2 tablespoons or an ice cream scoop. Garnish the muffins with more cherries and chocolate pieces and then put them in the preheated oven.
Bake the muffins at 180°C (top/bottom heat) for about 25 minutes until the chocolate cherry muffins have risen nicely. Take the finished muffins out of the oven, let them cool on a rack and then serve them lukewarm. Have fun baking!
