In today’s post I’m going to show you a recipe from Spain, more precisely from Canary Islands cuisine. Today there is a recipe for wrinkled potatoes or “Papas Arrugadas”. These are unpeeled potatoes that are boiled in salt water to give them a salt crust.
We serve the wrinkled potatoes together with 2 delicious sauces or dips, a pepper dressing also called “Mojo Rojo” and a herb sauce also called “Mojo Verde”. Have fun imitating!

Ingredients for 4 servings:

- 1 kilogram of baby potatoes
- 2 – 3 tablespoons sea salt
…for red peppersauce:
- 1 red bell pepper
- 2 – 3 cloves garlic
- 75 milliliters olive oil
- 1 heaping teaspoon sweet paprika powder
- ½ teaspoon cumin
- Chilli flakes to taste
- Apple cider vinegar
- Salt & pepper

- 1 small bunch fresh parsley
- 1 small bunch fresh coriander
- 2 – 3 cloves garlic
- 75 milliliters olive oil
- ½ teaspoon cumin
- Chilli flakes to taste
- Apple cider vinegar
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Large pan or pot for the potatoes
- Mixing cup for the sauces
- Pure blender
Instructions:
…for Spanish Wrinkled Potatoes “Papas Arrugadas”:
Wash 1 kilogram of baby potatoes well and place them in a large pot with the peel on, the potatoes should not be on top of each other. Cover the potatoes about three quarters with water and add 2 – 3 tablespoons of sea salt. Bring the potatoes to the boil & cook for 25 – 30 minutes until all the water has evaporated & only the salt remains on the bottom of the pot.
Stir the potatoes occasionally during cooking so that all potatoes cook evenly. As soon as the water has almost completely evaporated, turn off the heat and toss the potatoes a few times until all the potatoes are covered with a coat of salt. Let the pan stand for a few minutes and, if necessary, swirl it again and repeat until all the potatoes are covered with a nice salt crust.
For the pepper sauce, wash a bell pepper, remove the seeds and cut it into small pieces. Put the pepper pieces together with 2 – 3 peeled garlic cloves, 1 heaped teaspoon of paprika powder (sweet), ½ teaspoon of cumin, chili flakes to taste, a good dash of apple cider vinegar and 75 milliliters of olive oil in a mixing bowl and puree into a creamy sauce, season with salt and pepper & set aside until ready to serve.
For the herb sauce, wash and roughly chop a bunch each of coriander & parsley. Put the herbs together with 2 – 3 peeled garlic cloves, ½ teaspoon of cumin, chili flakes to taste, a good dash of apple cider vinegar and 75 milliliters of olive oil in a mixing bowl and puree into a creamy sauce, season with salt and pepper and set aside until ready to serve .
Arrange the Spanish wrinkled potatoes on plates together with the two dips and serve. Have fun cooking! Bon appetit!
