In today’s post, I’ll show you a quick & easy sandwich recipe with a classic Italian twist.
Tomatoes, mozzarella and basil pesto are sandwiched between 2 slices toast bread and grilled in a pan. Done quickly & incredibly delicious! I wish you lots of fun cooking 😉

Ingredients for 4 servings:
…for the basil pesto:
- 1 pot of fresh basil
- 100 milliliters olive oil
- 50 grams Parmesan cheese
- 50 pine nuts (alternatively almonds)
- 2 cloves of garlic
- Pepper

- 2 – 3 tomatoes
- 2 mozzarella balls
- 8 slices sandwich toast or white bread
- Salt & pepper
- Butter for frying

- High container to puree
- Blender
- Grater
- Frying pan

Preheat the oven to 150 ° C (top/bottom heat). Coarsely shred the Parmesan cheese with a grater. Pluck basil leaves from the stems. Peel garlic and cut into small pieces. Slice tomatoes into thin slices. Also cut the mozzarella into thin slices.
…for the basil pesto:
Give all ingredients (basil leaves, grated Parmesan cheese, pine nuts, garlic & olive oil) into a high container & season with pepper. Next, puree everything for about 1 – 2 minutes with a blender until you got a creamy sauce.
…for the sandwiches:
Spread a sandwich toast with 1 – 2 tablespoons basil pesto & top evenly with tomato & mozzarella slices. Season well with salt & pepper, garnish with another tablespoon pesto on top & cover the sandwich with a second slice toast bread. Repeat that for the rest of the sandwiches until all ingredients are used up.
Next, heat up a large pan adding a generous flake of butter & “grill” or brown the sandwiches for about 2 minutes each side over low to medium heat. Finally transfer the done sandwiches to the preheated oven & warm through for about 5 – 10 minutes until the mozzarella cheese is completely melted, then serve immediately.
