Ingredients for 4 servings:
- 2 chicken breast fillets
- 8 sandwich toasts
- ½ head lettuce “Lollo Biondo”
- 2 tomatoes
- ¼ cucumber
- 2 shallots
- 2 spring onions
- 1 hand sesame seeds
- 100 milliliters soy sauce
- 75 milliliters pineapple juice
- 1 clove of garlic
- 1 small piece ginger
- 2 tablespoons brown sugar
- 2 tablespoons maple syrup
- 1 tablespoon white wine vinegar
- 1 teaspoon cornstarch
- Salt & pepper
Kitchen Helper/Gadgets:
- Kitchen paper
- Casserole
- Large pan
- Whisk
- Bowl to stir together the ingredients for the teriyaki sauce
- Cup to stir together soy sauce and cornstarch
- Toaster or panini grill
- Fine grater
Instructions:
Preheat the oven to 200°C (top/bottom heat). Rinse the chicken breast fillets under running water, pat dry them with kitchen paper & place them next to each other in a baking dish. Season the chicken with salt and pepper, then give the baking dish for 20 – 25 minutes (depending on the thickness of the fillets) into the preheated oven.
…more preparations:
Heat up a pan without adding oil or fat and brown about 1 hand of sesame seeds for a few minutes, then set aside. Peel shallots and cut into fine strips. Remove wilted green from the spring onions, then cut into fine rolls. Cut tomatoes into slices. Also cut cucumber into thin slices.
Pick the lettuce leaves from the head, wash them and gently pat dry. Stir together 1 teaspoon of cornstarch with 1 – 2 tablespoons of soy sauce. Peel garlic and ginger.
…for the teriyaki sauce:
In a bowl stir together 2 tablespoons of brown sugar with 2 tablespoons of maple syrup, 1 tablespoon of white wine vinegar, the remaining soy sauce & 75 milliliters of pineapple juice. Finely grate garlic & ginger with a grater and add to the sauce, then mix thoroughly.
Heat up a large pan without adding oil or fat, add the sauce and bring to a boil over high heat. Allow the teriyaki sauce to simmer for 1 – 2 minutes, then add the cornstarch mixture and stir in with a whisk. Allow the sauce to simmer for another 2 – 3 minutes until the desired consistency is reached, then remove the sauce from heat and set aside.
…for the Chicken Teriyaki Sandiwches:
Toast sandwich breads in a toaster or panini grill. Get the chicken out of the oven and cut into thin strips with a sharp knife. Spread a bit of teriyaki sauce onto the roasted sandwich toast, then add lettuce, tomatoes, cucumbers, shallots and chicken breast strips.
Finally, sprinkle the sandwich with a bit more teriyaki sauce and garnish with a few spring onions and sesame seeds. Lid the sandwich with a second toast and serve. Bon Appetite!
