Tagliatelle & spaghetti are one of my favorite types of pasta. Together with a creamy spinach sauce, they form a tasty & full-bodied vegetarian pasta dish.
The spinach sauce is cooked super fast & consists mainly of milk & leaf spinach. The sauce is only seasoned with nutmeg & a pinch of salt and pepper. Have fun cooking!

Ingredients for 4 servings:
- 500 grams tagliatelle pasta
- 400 grams leaf spinach (frozen)
- 400 milliliters milk
- 1 large onion
- 1 – 2 clove(s) garlic
- ¼ teaspoon nutmeg
- Oil for frying
- Salt & pepper
- 4 eggs (cooked)
Required kitchen gadgets, helper & preparations:
- Large pot to cook pasta
- Small pot or saucepan to cook spinach sauce
- Blender

Peel off onion & chop finely. Also peel of 1 – 2 clove(s) garlic & chop finely. Heat up a large pot with salted water, bring to a boil & cook 500 grams tagliatelle pasta for about 7 – 8 minutes or according to package directions until al dente.
…for the spinach sauce:
Heat up a saucepan adding a dash oil & sweat onions & garlic over medium heat for about 2 – 3 minutes until glassy, stirring occasionally.
Next, add 400 grams frozen spinach leafs & allow to defrost over medium heat, stirring from time to time. Once the spinach is completely fallen apart, pour in 400 milliliters milk, give everything a good stir & then bring to a boil.
Allow the sauce to simmer for a few seconds, then remove from heat & puree with a blender for about 1 minute until you got a creamy & thick consistency.
Drain the done tagliatelle pasta over a collander & serve pasta along with the spinach sauce on deep plates. Finally garnish the pasta with a halved & cooked egg & serve. Delicious. I wish you lots of fun cooking 😉
