In today’s post I will show you a super delicious recipe from the Greek cuisine that everyone has probably ordered in a Greek restaurant or delivery service.
Today we cook Greek souvlaki skewers with tzatziki, the meat is marinated with white wine vinegar, olive oil, rosemary, thyme, garlic & shallots, then skewered & grilled. Super tasty, super easy, it’s best to do it right away 🙂

Ingredients for 4 servings:
…for the Souvlaki:
- 800 grams pork loin steaks (alternatively neck steaks or pork fillet)
- 2 – 3 shallots
- 2 cloves of garlic
- 3 – 4 sprigs rosemary
- 6 – 7 stalks thyme
- 50 milliliters white wine vinegar
- 50 milliliters olive oil
- Salt & pepper
…für the tzatziki sauce:
- 150 grams Greek yoghurt
- 150 grams regular quark
- 1 – 2 clove(s) of garlic
- ½ cucumber
- 1 finely chopped dill (fresh or frozen)
- A dash olive oil & white wine vinegar each
- Salt & pepper
Kitchen Helper/Gadgets:
- Kitchen paper
- Cling film
- 8 meat skewers
- Large grill pan
- Large bowl for marinating
- Small bowl for the tzatziki sauce
- Garlic press
- Grater
- Kitchen towel
Instructions:
…preparations for the meat:
Rinse pork loin under running water and pat dry with kitchen paper, then cut into 2 – 3 centimeters large pieces with a knife. Peel shallots and cut into fine rings. Peel garlic & chop finely. Pluck rosemary & thyme against the growth direction from the stems.
Give meat, shallots, garlic & herbs into a large bowl, also add 50 milliliters olive oil & 50 milliliters white wine vinegar. Season everything with salt & pepper & mix well, then allow to rest in the fridge covered with cling film for at least 1 hour (better overnight).
…for the tzatziki sauce:
Grate ½ cucumber with a grater & give the cucumber rasp on a kitchen towel, then squeeze vigorously over the sink to extract the excess water from the cucumber.
Give the squeezed out cucumber rasp along with 150 grams regular quark, 150 grams Greek yoghurt into a small bowl. Add 1 clove of pressed garlic, a tablespoon finely chopped dill & a dash of olive oil & white wine vinegar each. Finally season the tzatziki sauce with salt & pepper, then set aside until serving.
…for the souvlaki skewers:
Put the meat evenly on the skewers & slightly strip off the marinade. Then heat up a grill pan without adding oil or fat and sear the souvlaki skewers for about 2 minutes each side.
Serve the Souvlaki along with Tzatziki Sauce, French Fries & some Onion Rings.
