A pide pizza is an elongated & boat-shaped pizza that is widely used in Turkey. A pide pizza can be topped differently depending on the region, e.g. with ground beef, cheese or even spinach.
In today’s post I will show you a delicious recipe for a Turkish pide pizza with ground beef. Have fun cooking!

Ingredients for 8 servings:
…for the dough:
- 500 grams flour
- 200 milliliters water
- 50 milliliters oil
- 1 heaping tablespoon natural yoghurt
- ½ cube fresh yeast
- 1 teaspoon salt
- 1 teaspoon sugar
- Additional flour for the countertop
…for the stuffing:
- 500 grams ground beef
- 1 large onion
- 2 red pointed peppers
- 1 tomato
- 1 – 2 clove(s) of garlic
- 2 tablespoon ajvar
- 4 – 5 stalks thyme
- ½ bunch parsley
- ½ teaspoon sumac
- ½ teaspoon cumin
- Salt & pepper
…more ingredients:
- 1 egg
- Black cumin seeds or black sesame seeds sprinkle the pide
Kitchen Helper/Gadgets:
- Tall container for the yeast-water mixture
- Whisk or fork
- Mixing bowl
- Mixer/Kitchen machine
- Kitchen towel
- Garlic press
- Rolling pin
- Baking tray + parchment paper
- Cup to whisk the egg
- Brush
Instructions:
…for the dough:
Crumble ½ cube of fresh yeast into a high container and add 1 teaspoon sugar as well as 200 milliliters of lukewarm water. Whisk together until yeast and sugar have completely dissolved.
Give the yeast-water mixture along with 500 grams flour, 50 milliliters oil, 1 heaping tablespoon natural yogurt and 1 teaspoon salt into a mixing bowl, then knead to a smooth dough with your hands or a kitchen machine for about 4 – 5 minutes. Form the dough into a ball, place it back to the mixing bowl & allow to rest for 30 minutes in a warm place covered with a kitchen towel.
…for the ground beef stuffing:
Peel a large onion and chop finely. Deseed pointed peppers and dice finely. Remove the green tomato stalk and cut into fine cubes. Pick thyme leaves from stalks against growth direction. Finely chop parsley and set aside about ¼ of it for garnish.
Give all finely chopped ingredients together with 500 grams of ground beef, 2 tablespoons ajvar & 1 – 2 pressed clove(s) of garlic into a mixing bowl. Season the mixture with ½ teaspoon of cumin, ½ teaspoon of sumac, thyme leaves & a good pinch of salt & pepper, then mix with your hands until all ingredients are well incorporated.
…for the pide:
Preheat oven to 180°C (top/bottom heat). Whisk up 1 egg in a cup and set aside. After the resting period, with your hands knead the dough again on a slightly floured working top for about 1 – 2 minutes, then cut into 8 equal sized pieces with a knife.
Form all dough pieces into small balls and then roll out until thin and flat on a slightly floured working top to form oblong & oval dough sheets.
Place 2 dough sheets next to each other on a lined baking tray and spread about 1 hand of the mince filling evenly on it while taking care to leave around 1 – 2 centimeters free on the edges.
Fold the blanked edges about 1 centimeter over the filling & slightly squeeze together the tips at the ends creating small “boats”. Finally, brush the folded edges with some whisked egg and sprinkle with a few black cumin or black sesame seeds.
Then bake the pide boats for 20 – 25 minutes in the preheated oven. Get the done pides out of the oven and serve them garnished with some parsley and possibly a salad & tzatziki. Bon Appetite!
