Wheat & Rye Bread with Sourdough & Yeast

Ingredients for 1 Wheat & Rye Bread:

Kitchen Helper/Gadgets:

  • Mixer/Food processor
  • A mixing bowl
  • Casserole with lid
  • High vessel for stirring the yeast-water-mixture
  • Baking paper
  • Kitchen towel
  • Spatula
  • Whisk or Fork
  • Wire rack

Instructions:

…preparations:

Crumble yeast into a high vessel and pour in 150 milliliters of lukewarm water and add 1 teaspoon of sugar. Stir with a whisk or a fork until yeast and sugar have dissolved. Line a baking dish/casserole with parchment paper.

…for the rye bread dough:

Give 300 grams of sourdough, 300 grams of wheat flour, 50 grams of rye flour, the yeast-water mixture and 1 teaspoon of salt in a mixing bowl and mix with the help of a food processor or a blender until a smooth & sticky dough. Loosen the batter from the bowl wall using a spatula and centrally form a ball. Let rest/stand the dough covered with a kitchen towel in a warm place for about 1 hour until the volume has increased significantly.

…for the wheat & rye bread:

Flour the work top and give the sticky dough onto the floured countertop. Also dust the dough all around with flour and then knead pulling from the outside inwards for about 1 – 2 minutes, until the dough is covered all around with flour. Form a ball and then put into the lined baking dish. Cover the dough with a kitchen towel and let rise for another 30 minutes in a warm place.

… other preparations:

Preheat the oven to 250 degrees (top/bottom heat).

…for the rye bread:

Cut the bread surface 2 – 3 times approximately ½ – 1 cm deep and bake the bread covered with a lid in the preheated oven for 30 minutes. Get the baking dish out of the oven, remove the lid and bake again for 5 – 10 minutes without the lid. During this time have a look at the oven, so that the bread will not get too dark.

Then get the bread out of the oven, lift together with the baking paper on a wire rack and allow to cool. Have fun baking!
