Belgian waffles with hot cherries

Ingredients for 12 waffles:

  • 300 grams of flour
  • 300 milliliters of milk
  • 300 milliliters of water
  • 3 eggs
  • 150 grams of butter
  • 1 tablespoon of sugar
  • ½ cube of yeast
  • Powdered sugar to dust the waffles
  • A pinch of salt
  • 1 glass of sour cherries
  • 1 heaping teaspoon of cornflour
  • 1 packet of vanilla sugar
  • Some oil for the waffle maker

Kitchen Helper/Gadgets:

  • Mixing Bowl
  • Mixer
  • Kitchen towel
  • Sieve
  • Waffle iron/maker
  • Brush

Instructions:

…preparations:

Melt 150 grams of butter in the microwave. Crumble ½ cube of yeast into a high vessel, pour in 300 milliliters of lukewarm water and whisk until yeast has completely dissolved. Separate 3 eggs in egg yolks and egg whites.

…for the batter:

Give egg yolks together with flour, milk, yeast-water, 1 tablespoon of sugar and the melted butter into a mixing bowl. Mix all ingredients using a blender/mixer until a smooth batter and let rest/stand covered with a kitchen towel for about 30 minutes.

…other preparations:

Beat egg whites until stiff with a pinch of salt.

…for the hot cherries:

Drain sour cherries through a sieve, collect the juice in a bowl. Stir 3 – 4 tablespoons of cherry juice together with a heaping teaspoon of cornstarch and 1 packet of vanilla until smooth.

Heat up a small saucepan adding the remaining cherry juice and bring to a simmer. Stir in the cornflour mixture and continue to simmer for about 1 minute. Add the drained cherries, give them a good stir and then remove the saucepan from the heat.

…for the belgian waffles:

Briefly stir the batter after the resting period, then carefully fold in the stiff egg whites. Slightly brush the waffle iron with oil, then give about 1 ladle of batter per waffle in a waffle iron and fry for about 4 – 5 minutes until golden brown.

Serve the waffles still hot on plates and dust with icing sugar. Serve waffles together with hot cherries.
