Braided Yeast Buns with dried Cranberries

Ingredients for 4 Braided Yeast Buns :

  • 300 grams of flour
  • 125 milliliters of lukewarm milk
  • 50 grams of butter
  • 2 eggs
  • 2 tablespoons of sugar
  • ½ cube of yeast
  • ½ teaspoon of salt
  • 125 grams of dried cranberries
  • Some flour for the worktop

Kitchen Helper/Gadgets:

  • Tall container for stirring the yeast milk mixture
  • Whisk or fork
  • Mixing Bowl
  • Mixer/Food processor
  • Kitchen towel
  • Knife
  • Baking tray + parchment paper
  • Brush

Instructions:

…preparations:

Crumble ½ cube of yeast in a high vessel & pour in 125 milliliters of lukewarm milk. Also add 2 tablespoons of sugar and stir together using a whisk or a fork until sugar & yeast have dissolved completely.

…for the dough:

Give 300 grams of flour, the yeast-milk mixture, 1 egg, 50 grams of cold butter and ½ teaspoon salt in a mixing bowl and knead with a mixer or food processor until smooth. If the dough is too sticky (depending on how big the egg is) just add some more flour. Finally add the dried cranberries and knead until well incorporated.

Flour the worktop, give the dough onto the floured surface & knead by pulling from the outside inwards, so that the dough is covered with a light flour coating. Then form a ball of the dough and place in a mixing bowl. Cover the dough with kitchen towel and let rest/stand in a warm place for about 30 – 45 minutes until the dough volume has roughly doubled.

…for the Braided Yeast Buns:

Knead the dough again for about 1 minute and then cut with a knife in 4 equal sized pieces. Divide each piece of dough again into 3 smaller equal-sized pieces and then roll the dough pieces under your palms into 3 roles of equal length (about 15 – 20 centimeters).

Put the roles on top of each other, press down slightly and then lay one of the outer roles over the middle role. Now lay the opposite outer role over the middle and then back to the other outer role over the middle role. Continue that until all roles are interwined. Lay the ends of the roles over each other, press down slightly and then “hide” them under the braid. Also “hide” the beginning of the braid.

…other preparations:

Preheat the oven to 180°C (top/bottom heat). Whisk up 1 egg.

…for the Braided Yeast Buns:

Brush the braided yeast buns after standing/resting time with beaten egg & then bake for about 30 minutes in the preheated oven until golden brown. Get the braided yeast buns out of the oven and allow to cool on the baking sheet.
