Chocolate Cherry Cake for Valentine’s Day

Ingredients for 1 Chocolate Cherry Cake for Valentine’s Day:

  • 300 grams of flour
  • 125 grams of butter
  • 125 grams of sugar
  • 125 grams of brown sugar
  • 100 grams of baking cocoa
  • 1 heaped teaspoon of baking powder
  • 4 eggs
  • 100 grams of dark chocolate
  • 175 grams of cherries / morello cherries (from the glass)
  • 100 milliliters of cherry juice
  • 1 pinch of salt
  • Powdered sugar to dust
  • A piece of butter and a little flour to grease the springform pan

Kitchen Helper/Gadgets:

  • Springform pan in heart shape
  • Paper stencils for the lettering and the hearts
  • Mixing bowl
  • Blender/Food processor
  • Sieve
  • Knife
  • Spatula

Instructions:

…preparations:

Grease the springform pan with a knob of butter and sprinkle the pan with 1 – 2 tablespoons of flour sprinkle, then set aside. Coarsely chop the dark chocolate with a knife. Drain the cherries using a sieve and catch/collect the cherry juice. Melt 125 grams of butter in the microwave (about 30 seconds at 600 watts should be enough). Preheat the oven to 180°C (top/bottom heat).

…for the batter:

Give 4 eggs, 125 grams of sugar and 125 grams of brown sugar into a mixing bowl and beat using a blender or food processor about 4 – 5 minutes until fluffy. Sift 300 grams of flour, 100 grams of baking cocoa and 1 heaping teaspoon of baking powder and add to the batter. In addition pour in 100 milliliters of the collected cherry juice & the melted butter. Mix with a food processor or a blender until all ingredients are well incorporated. Once the batter runs hard tearing from the stirring hook, it is perfect.

Finally gently fold in the chopped chocolate and 175 grams of drained cherries using a spatula. Pour the batter into the prepared springform pan, smooth down & then bake 40 – 45 minutes in the preheated oven.

Get the cake out of the oven, loosen the springform pan and allow to cool.

Arrange the paper stencils (I ♥ YOU) onto the cake and then sprinkle the whole cake with powdered sugar. Remove the stencils carefully and then serve the cake.
