Swedish Meatballs (Köttbullar) with Cream Sauce

Ingredients for 4 servings:

  • 500 grams of ground beef
  • 1 roll from the previous day
  • 1 onion
  • 175 milliliters of milk
  • 30 grams of bread crumbs
  • 1 egg
  • 200 milliliters of beef stock
  • 200 milliliters of cream
  • 1 tablespoon of flour
  • 1 tablespoon of tomato paste
  • 1 – 2 tablespoons of butter
  • Salt & pepper
  • Oil for frying

Kitchen Helper/Gadgets:

  • Mixing bowl
  • A large frying pan
  • Kitchen paper
  • Whisk

Instructions:

…preparations:

Peel onion and chop finely. Cut the bread roll into cubes, place in a mixing bowl and then pour in 175 milliliters of warm milk, mix together & set aside. Preheat the oven to 100°C (top/bottom heat).

…for the minced meat mixture:

Heat up a pan adding a dash of oil and fry the finely chopped onions over medium heat for a few minutes until glassy, ​​stirring occasionally. Once the onions are translucent, pull the pan from the heat, let cool slightly and also give the onions in the mixing bowl.

Next add 500 grams of minced beef, 1 egg, 30 grams of bread crumbs, a generous pinch of salt and a generous pinch of pepper and mix with your hands until all ingredients are well incorporated. Form small meatballs of the meat mixture (either 20 bigger or 40 smaller meatballs) & place them on a plate.

…for the Köttbullar:

Heat up a large frying pan adding a dash of oil and fry the meatballs in several surges for about 6 – 8 minutes from all sides until brown and crispy, turning occasionally. Lift the meatballs out of the pan and keep warm in a preheated oven at about 100°C.

…for the cream sauce:

Clean the pan with a paper towel, add 1 – 2 tablespoons of butter & put the pan back on the stove. Once the butter begins to foam add 1 tablespoon of flour and stir with a whisk until the flour is incorporated clumping free. Now pour in 200 milliliters of beef stock, 200 milliliters of cream & add 1 tablespoon of tomato paste, a pinch of salt and a pinch of pepper, stir with a whisk and let simmer for about 2 – 3 minutes until the sauce reaches a creamy consistency.

Serve the meatballs along with the cream sauce and possibly homemade oven fries. Bon Appetite!
