- White wine vinegar
- About 1½ liters of oil for deep-frying
Required kitchen gadgets, helper & preparations:
- Large pot to blanch the fries
- Pot or wok for deep-frying
- Kitchen thermometer (alternatively wooden stick)
- Kitchen paper
Instructions for the Homemade French Fries:
Peel the potatoes and then use a knife to cut them into 1 cm wide slices and afterwards into 1 cm thick sticks. Then place the potato sticks in a colander and rinse under running water to wash off the excess starch.
Next, cover the French fries with water in a large saucepan, add a good dash of white wine vinegar, then bring to the boil and simmer in the vinegar water for 5 minutes.
Drain the fries over a colander and let the steam evaporate for 5 – 10 minutes. Meanwhile, heat a large pot or wok with 1½ liters of oil for deep-frying. As soon as the oil has reached a temperature of 190°C, carefully put the French fries in portions into the hot oil & pre-fry for 1 minute, then lift them out of the oil with a ladle and let them cool down completely for 30 minutes.
Tip: Alternatively, to test whether the oil is already hot enough, you can dip a small wooden stick into the oil & as soon as small bubbles appear on the wooden stick, you can start deep-frying.
After 30 minutes, heat the oil again to 190°C and deep-fry the fries for another 3 – 4 minutes until they are golden yellow on the outside and crispy, then lift them out of the oil and let them drain again briefly on kitchen paper.
Put the finished fries in a bowl, season with salt, toss a few times and then serve with mayonnaise & ketchup! Have fun cooking!
