Creamy Potato Soup with Bacon

Creamy Potato Soup with Bacon

Ingredients for 4 servings:

  • 1 kilogram floury potatoes
  • 1 onions
  • 2 carrots
  • 1 small piece of celeriac
  • 1 small stick of leek
  • 1,5 liters of vegetable stock
  • 100 grams of bacon
  • 1 cup of cream
  • 1 tablespoon of majoram
  • Nutmeg
  • Clarified butter
  • Salt & pepper
  • Fresh parsley for garnish

Kitchen Helper/Gadgets:

  • Kitchen paper
  • Large pot with lid
  • Blender

Instructions:

Peel potatoes and cut into 2 centimeter large pieces. Also peel carrots & cut roughly into pieces. Cut the leek into rings. Roughly dice celeriac. Peel onion and chop roughly. Cut the bacon into small cubes. Finely chop parsley and set aside until serving.

…for the potato soup:

Heat up a pot adding 1 tablespoon of clarified butter and sauté the diced bacon for about 2 minutes turning occasionally. Lift the bacon out of the pot and allow to drain on kitchen paper.

Give the vegetables into the pot and stir-fry for about 4 – 5 minutes. Deglaze everything with 1,5 liters of vegetable stock and stir in 1 tablespoon marjoram, then bring to a boil. Once the soup boils up, reduce the heat slightly and simmer for 25 – 30 minutes with the lid closed.

After 30 minutes, remove the soup from the stove, season with salt, pepper and nutmeg, and add 1 cup of cream. Use a blender to puree the soup and add some more stock if necessary.

Serve creamy potato soup on deep plates and serve with finely chopped parsley and diced bacon.

  1. Die Suppe schaut lecker aus.. Ich bin zwar kein Fan von Speck in er Suppe, vor allem nicht von geräuchertem, aber ich werde die Suppe trotzdem Mal nachkochen ohne den Speck. Bin schon gespannt wie sie schmecken wird 🙂
