Treecake Cookies

Ingredient for about 35 Treecake Cookies:

  • 6 eggs
  • 250 grams of butter
  • 250 grams of sugar
  • 150 grams of flour
  • 100 grams of cornstarch
  • 1 packet of baking powder
  • 1 teaspoon of rum flavor
  • 1 sachet of vanilla sugar
  • 125 grams of marzipan raw material
  • 50 grams of powdered sugar
  • 2 – 3 tablespoons of red jam
  • 200 grams of dark chocolate

Kitchen Helper:

  • 26er springform pan + parchment paper
  • Large pot + suitable bowl for the double boiler
  • Mixing bowl
  • high vessel to beat the egg whites until stiff
  • Mixer/food processor
  • Sieve
  • Spatula
  • Dough scraper or a cake lifter
  • A wire rack/baking shelf
  • Rolling pin

Instructions:



…preparations:

Line the bottom of a springform pan with parchment paper. Separate 4 eggs into whites and yolks. Timely take butter out of the fridge to assume room temperature. Preheat the oven to 220 degrees (grill function).

…for the treecake batter:

In a large mixing bowl combine soft butter, 2 eggs, 4 egg yolks, about ⅔ of the sugar, 1 sachet of vanilla sugar & 1 tablespoon of rum flavor & mix with a mixer or food processor for about 3 – 4 minutes until creamy.

Sieve cornflour, flour and baking powder to the batter and gently fold in with a spatula & stir until everything is smooth.




Whisk up the egg whites with a pinch of sugar, then gradually add the remaining sugar (75 grams should be left) stirring/whisking constantly until the egg whites form stiff & solid peaks. Add the beaten egg whites to the batter and gently fold in with a spatula.

…for the treecake:

Give 2 tablespoons of batter into the prepared springform pan and spread evenly on the baking paper using a dough scraper (alternatively with a cake server/lifter). Give the springform pan in the preheated oven and bake light brown on the middle rack about 2 minutes. Take the springform pan out of the oven, give another 2 tablespoons of batter into the springform pan and spread evenly on the baked layer. Bake the second layer on the middle rack about 2 minutes until light brown. Do the same for the rest of the batter until it is completely used up.




Take the cake out of the oven and allow to cool for about 5 – 10 minutes. Remove the springform pan and topple the cake on a grid to remove the baking paper, then allow the cake to cool almost completely.

…for the marzipan layer:

Knead together 125 grams of marzipan raw material & 50 grams of powdered sugar in a mixing bowl. Then dust the work surface with a bit powdered sugar and roll out the marzipan with a rolling pin until circular & size of the springform pan, possibly use the edge of the springform pan as a kind of large round cookie cutter.

…für die Baumkuchen Plätzchen:

Spread the chilled tree cake with 2 – 3 tablespoons of red jam and carefully stick together tree cake & marzipan on the jam. Then cut the complete cake with a knife in about 4cm x 4cm squares.

& jeweils 1 Esslöffel der geschmolzenen Schokolade dekorativ von oben über die Plätzchen laufen lassen, die Schokolade anschließend abkühlen lassen.

…for the chocolate coating:

Melt the dark chocolate over a double boiler until smooth. Place all treecake squares on a wire rack & decorate each cookie with about 1 tablespoon of melted chocolate on top, then allow the chocolate to cool completely before serving.
