I cook today: Turkish Gözleme with Spinach & Feta Cheese

Ingredients for 8 servings:
…for the dough:
- 400 grams flour
- 100 milliliters lukewarm water
- 100 milliliters lukewarm milk
- 40 milliliters oil
- ¼ cube of fresh yeast
- 1 teaspoon sugar
- 1 teaspoon salt
…for the filling:
- 500 grams fresh spinach
- 200 grams feta cheese
- 2 – 3 shallots
- 1 – 2 clove(s) of garlic
- 3 – 4 sprigs mint
- 3 – 4 sprigs parsley
- 3 – 4 stalks thyme
- Oil for frying
- Salt & pepper
Kitchen Helper/Gadgets:
- High container to stir together the yeast-mixture
- Whisk or fork
- Mixing bowl
- Mixer/Kitchen machine
- Rolling pin
- Kitchen towel
- Large pan
Instructions:
Crumble ¼ cube of fresh yeast into a high container. Pour in 100 milliliters of lukewarm water & 100 milliliters of lukewarm milk, also add 1 teaspoon of sugar. Stir together with a whisk or fork until sugar and yeast have completely dissolved, then set aside.
Add 400 grams of flour along with the yeast mixture, 40 milliliters of oil & 1 teaspoon salt to a mixing bowl and knead with a kitchen machine or your hands for about 4 – 5 minutes until a smooth dough. Then shape the dough with your hands to form a ball and allow to rest in a warm place for 30 minutes covered with a kitchen towel.
Peel shallots and cut into fine strips. Peel garlic and chop finely. Pick the mint & parsley leaves from the sprigs and chop finely. Also pick the thyme leaves against the growth direction from the stalks.
…for the spinach filling:
Heat up a large pan adding a dash of oil and sweat the onion strips and finely chopped garlic for about 2 – 3 minutes over medium heat, stirring occasionally. Now gradually add the fresh spinach to the pan and allow to fall apart, stirring occasionally. As soon as the whole spinach is used up, add the finely chopped herbs and season with a good pinch of salt & pepper.
Give the spinach a quick stir to mix in the herbs and spices and then remove the pan from heat. Finally crumble the feta cheese to the spinach, give it a quick stir & set aside to cool.
…for the Gözleme:
After the rest period, thouroughly knead the dough again for about 1 minute on a lightly floured worktop and then cut with a knife into 8 equal sized pieces. Shape each piece of dough with your hands to form small balls and then roll out each dough ball with a rolling pin on a lightly floured worktop as round and thin as possible to the size of a plate.
Give 2 – 3 tablespoons of the spinach filling on one half of the dough sheet, then fold the dough sheet once around the filling & squeeze together the edges with a fork.
Heat up a large pan adding a dash of olive oil and fry the filled dough sheets for about 2 – 3 minutes over medium heat until golden brown on one side, then gently turn once and fry for additional 2 – 3 minutes on the other side until done. Lift the done Gözleme out of the pan & serve along with tomato salad, for example. Bon Appetite!
