In today’s post I will show you a quick & easy recipe for delicious baked nachos or tortilla chips with tomato salsa. The nachos are topped with a Mexican-seasoned minced meat mixture and then baked in the oven to gratinate. Have fun cooking at home!

Baked Nachos with Tomato Salsa

Ingredients for 1 sheet Baked Nachos:

…for the tomato salsa:

  • 2 tomatoes
  • 1 spring onion
  • ½ lime
  • 1 hand parsley
  • 1 small clove garlic
  • Olive oil
  • Sugar
  • Salt & pepper

…for the nachos:

  • 150 grams nachos (chili flavor)
  • 200 grams minced beef
  • ½ onion
  • 3 tablespoons corn
  • 3 tablespoons kidney beans
  • 1 teaspoon cumin
  • ½ teaspoon paprika powder (noblesweet)
  • 125 grams grated cheddar cheese
  • Salt & pepper

Kitchen Helper/Gadgets:

  • Bowl to stir together the tomato salsa
  • Garlic press
  • Large pan
  • Spatula
  • Baking sheet
  • Baking paper

Instructions:




…preparations for the tomato salsa:

Cut 2 tomatoes into small cubes. Finely chop parsley. Cut spring onion into small rolls.

…for the tomato salsa:

In a bowl stir together tomato cubes, spring onions and parsley with 1 pressed clove of garlic, the juice of ½ lime, a dash of olive oil and a good pinch of salt, pepper & sugar, mix well, then set aside until serving.




…for the minced beef:

Peel ½ onion and cut into fine strips. Heat up a large pan adding a dash of olive oil and fry the onion strips for about 1 – 2 minutes over medium heat until glassy, stirring occasionally. As soon as the onions are glassy, add 200 grams of minced beef and brown for about 5 minutes until the beef is cooked and crumbly.

Reduce the heat and add 3 tablespoons of corn and kidney beans each, season with 1 teaspoon of cumin, ½ teaspoon of paprika powder and a good pinch of salt and pepper. Mix everything well and then remove the pan from the stove.




…for the baked nachos:

Line a baking sheet with baking paper and spread out 150 grams of nachos. Then top the nachos with the minced beef mixture & finally spread over with 125 grams grated cheddar cheese. Give the baking tray into the oven for about 3 – 4 minutes at 200°C (grill function) and bake the nachos until the cheese is melted. Get the nachos out of the oven and serve them along with the tomato salsa.
