Timely get the rump steaks out of the fridge to allow them reaching room temperature & season with salt and pepper on both sides. Heat up a large pan without adding oil or grease and sear the rump steaks on each side for 1 – 2 minutes. Remove the pan from the stove and give the rump steaks for 8 – 10 minutes into the preheated oven.
…for the chimichurri sauce::
Give 1 bunch cilantro along with 1 bunch parsley, 1 clove of garlic, ½ onion (cutted into chunks), 75 milliliters olive oil, the juice of ½ lime, 1 teaspoon oregano, ¼ teaspoon chili flakes, 2 tablespoons of red wine vinegar, a pinch of sugar & a good pinch of salt & pepper into a high container. Blend all ingredients with a blender for about 2 minutes until you got a herby & creamy sauce, then set aside until serving.
…further preparations:
Cut tomatoes into slices. Peel red onion and cut into fine rings. Wash rocket and pat dry thoroughly.
…for the Chimichurri Steak Sandwich::
Toast sandwich breads in a toaster, grill pan or panini grill. After 8 – 10 minutes get the beef out of the oven, wrap the rump steaks into a sheet of aluminum foil and allow to rest for about 5 minutes, then cut it into thin strips with a knife. Garnish a toasted sandwich bread with some rocket, tomatoes, onion rings & steak strips.
Finally, sprinkle the sandwich with a bit chimichurri sauce, lid the sandwich with a second toast and serve.
