  • Salt & pepper

…more ingredients:

  • 8 burger buns (store bought or homemade)
  • ½ cucumbere
  • 2 tomatoes
  • 1 red onion
  • 75 grams rocket
  • Oil for frying

Kitchen Helper/Gadgets:

  • Large pan
  • High container to blend the chickpeas
  • Blender
  • large bowl
  • Small bowl to stir together sauce
  • Garlic press

Instructions:

…for the sauce:

In a small bowl stir together 125 grams sour cream with 125 grams yogurt, 2 tablespoons ketchup, ½ tablespoon of sambal oelek, ½ pressed clove of garlic, 1 teaspoon finely chopped parsley, 1 teaspoon finely chopped dill & 1 teaspoon finely chopped chives. Season with salt and pepper, then set aside until serving.

…more preparations:

Cut ½ cucumber into thin slices. Peel red onion & cut into thin rings. Cut tomatoes into slices.

…preparations for the patties:

Deseed red pepper and cut into small pieces. Peel onion & a clove of garlic and finely chop. Heat up a large pan adding a dash of oil and add peppers, onions and garlic as soon as the pan is hot enough. Fry over medium heat for about 3 – 4 minutes until glassy, turning occasionally. Then pull pan from the stove, set aside & allow to cool.

Drain chickpeas and kidney beans over a colander, then transfer them to a high container and puree with a blender for 1 – 2 minutes until a sticky & mashy puree.

…for the patties:

Give chickpea-bean-puree together with paprika-onion-mixture, 100 grams breadcrumbs, 1 egg, 75 grams corn & 75 grams green peas into a large bowl.

Season everything with 1 teaspoon cumin, 1 teaspoon fennel seeds and a good pinch of salt and pepper, then mix/knead with your hands until all ingredients have been evenly distributed.

After that form 8 equal sized balls from the chickpea mass & flatten them to uniformly thick burger patties. Prepare a deep plate with some breadcrumbs and turn the finished patties into them on both sides.

Then heat up a large pan adding a good dash of oil and fry the patties for about 4 – 5 minutes per side over medium heat until golden brown. Once the patties are done, we can build up the burgers.

For that spread the under & upper bun half with a spoonful of sauce, then garnish with rocket, cucumber slices, tomato slices, onion rings & burger patty. Have fun cooking!
