Ingredients for about 4 servings:
- 250 milliliters cream
- 125 milliliters buttermilk
- 150 grams sugar
- 3 lemons
- A pinch of salt
- 1 teaspoon locust bean gum
Required kitchen gadgets, helper & preparations:
- Mxing bowl
- Whisk
- Lemon juicer
- Ice cream maker
- Flat Tupperware container to store the ice cream
Instructions for the Homemade Lemon Ice Cream:
First, juice 3 lemons with a citrus press, then add the lemon juice, 150 grams of sugar and 1 teaspoon of locust bean gum to a mixing bowl and stir with a whisk until the sugar has almost completely dissolved. Next, add the remaining ingredients (cream, buttermilk & salt) and stir in thoroughly with a whisk.
Pour the lemon ice cream mixture into the ice cream maker and let it freeze for about 30 minutes. As soon as the ice cream is creamy enough, serve immediately or, for storage, transfer to a shallow Tupperware bowl (with a lid) and store in the freezer, scoop out balls with an ice cream scoop and serve in a waffle!
