Vegetarian Potato Cauliflower Curry

“Aloo Gobi” or “Aloo Gobi” is the Indian term for a vegetarian potato cauliflower curry. The curry has a yellowish color, which is mainly achieved by the addition of turmeric.

As a side dish simply rice or Indian Naan Bread are suitable & for garnish finely chopped cilantro will be a good idea. Have fun cooking!

Vegetarian Potato Cauliflower Curry

Ingredients for 4 servings:

  • 1 small head cauliflower
  • 500 grams waxy potatoes
  • 1 can chopped tomatoes
  • 1 can coconut milk
  • 2 small onions
  • 1 – 2 clove(s) garlic
  • 1 small piece ginger (about 25 grams)
  • Each 1 teaspoon turmeric, garam masala, paprika powder (noble sweet), ground coriander, cumin
  • ¼ lemon
  • Oil for frying
  • Salt & pepper
  • Cilantro for garnish

Required kitchen gadgets, helper & preparations:

  • Large pot or wok
  • Grater

Peel potatoes and cut into bite-size pieces. Cut cauliflower into fine florets. Peel onions and chop coarsely. Peel garlic and finely grate, then peel ginger and also grate finely. Finely chop cilantro.

Heat up a large pot or wok adding a dash of oil & sweat the onions for about 1 – 2 minutes over medium heat, while stirring occasionally. Next, add finely grated garlic & ginger, also add 1 teaspoon each turmeric, ground coriander, garam masala, cumin & paprika powder (noble sweet) & stir in until spices & onions have distributed evenly.




In the next step add potatoes & cauliflower florets & mix well until the vegetables are slightly colored in red by the spice mixture.

Deglaze everything with 1 can chopped tomatoes & 1 can coconut milk. Give the curry a good stir, bring to a boil & allow to simmer over low to medium heat for about 25 minutes until the potatoes are done.




Finally season the curry with a dash of lemon juice, salt & pepper. Then serve the curry along with rice or Naan Bread & garnished with finely chopped cilantro.
